Chewy Cherry Granola Cookies
Yummy Chewy Cherry Granola Cookies have crispy edges with a chewy center with sweet dried cherries.

- 1 cup butter or two sticks
- 2/3 cups light brown sugar
- 1/3 cup Karo® Corn Syrup
- 1 egg
- 2 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 3 cups plain granola
- 1 cup dried cherries
First, in a mixing bowl mix together butter, light brown sugar and Karo® Corn Syrup until smooth- about 2 minutes.
Next, add egg and vanilla and mix for about 2 minutes.
Then, in a separate bowl, add flour, baking soda, salt and cinnamon.
Next, add 1/3 of the flour mixture at a time to butter sugar mixture mixing well after each addition. Mixture will be light and fluffy.
Then, stir in granola and cherries until well combined.
Next, refrigerate cookie dough for one hour. Dough will be easier to handle.
Then, preheat oven to 350F.
Next, add parchment paper to cookie sheets or spray with oil. Put one spoonful of cookie dough spaced two inches apart from each side.
Then, bake on 350F for 10-12 minutes. Let cool on cooling racks.
