Quinoa & Tomato Tabbouleh

This is healthy and delicious side dish! Quinoa & Tomato Tabbouleh has rainbow quinoa, fresh tomatoes and cucumbers and is lightly seasoned! It's so good and the perfect summer dish!

Ingredients

  • 1 cup rainbow quinoa or plain quinoa
  • 1 1/2 cups cucumber cut into 1 inch cubes
  • 1 cup tomato cut into 1 inch cubes
  • 1 scallion cut into 1/2 round pieces
  • 1 tbsp 1 tbsp chopped fresh parsley
  • 1 1/2 tbsp extra virgin olive oil
  • 1 tsp lemon juice (optional)
  • salt to taste
  • black pepper to taste

Instructions

  • First, cook quinoa according to package directions.

  • Meanwhile, in a large serving bowl, add cucumber, tomato, chopped parsley, oil, salt and pepper to taste and cooked quinoa. Stir until combined.

Store leftovers in the refrigerator for up to 5 days.
