Quinoa & Tomato Tabbouleh
This is healthy and delicious side dish! Quinoa & Tomato Tabbouleh has rainbow quinoa, fresh tomatoes and cucumbers and is lightly seasoned! It's so good and the perfect summer dish!
quinoa tabbouleh, tomato tabbouleh
or plain quinoa
cucumber cut into 1 inch cubes
tomato cut into 1 inch cubes
scallion cut into 1/2 round pieces
1 tbsp chopped fresh parsley
extra virgin olive oil
lemon juice (optional)
salt to taste
black pepper to taste
First, cook quinoa according to package directions.
Meanwhile, in a large serving bowl, add cucumber, tomato, chopped parsley, oil, salt and pepper to taste and cooked quinoa. Stir until combined.
Store leftovers in the refrigerator for up to 5 days.
