Coconut Lime Shrimp and Rice is a creamy and delicious weeknight dinner ready in 15 minutes!
First, cook Success® Boil-in-Bag Jasmine Rice according to package directions.
Meanwhile, in a large skillet on med/high heat, add olive oil and heat for 30 seconds.
Next, add asparagus to the skillet and cook for one minute.
Then, add coconut milk, ginger, lime juice and shrimp to the skillet. Cook for 5 minutes or until the shrimp has turned orange.
Last, add cooked and drained rice to the skillet. Stir until combined.
