Lemon Garlic Grilled Salmon Foil Packet with Broccolini

Ingredients
  • 1 lb salmon
  • 1 bunch Broccolini
  • 1/2 lemon
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic
Instructions
  1. First, in a small sauce pan, add oil, garlic and a squeeze of lemon. Cook on med/high heat for about 1 minute or until it starts to sizzle. Turn off heat.

  2. Next, using a large piece of heavy duty aluminum foil, place salmon filet on it. Add salt and pepper to taste. Zest the half lemon and add to the top of the salmon. Drizzle about 1 to 1 1/2 tbsp of cooked oil over top of the salmon. Cut two lemon slices and place over the top of the salmon.

  3. Then, close the foil by pulling up the bottom and top of the
    foil as shown in the pictures.

  4. Next, fold over the sides of the foil.

  5. Then, press the foil to close.

  6. Then, place the foil packet on the grill for 10-15
    minutes.

  7. Meanwhile, steam the broccolini in a medium sized pot. When done, drain water and add the remaining oil.

Recipe Notes

Storage:

You can store leftover salmon right inside the foil packet in your refrigerator. You may want to put it on a plate in case it leaks. Store salmon up to three days and broccolini up to 5 days.
