Garlic Shrimp & Zucchini Pasta
Sweet Zucchini and grape tomatoes with shrimp and your pasta make for a quick and healthy 30 min meal!

- 8 oz penne, mostaccioli or ziti pasta
- 2 cups zucchini, sliced in rounds 1/8" thick
- 3 tbsp extra virgin olive oil
- 5 cloves garlic, minced
- 1 lb peeled and deveined shrimp
- 1/2 cup grape or cherry tomatoes, halved
- 1/8 tsp dried parsley
- salt, to taste
- pepper, to taste
First, boil pasta according to package directions.
Meanwhile, in a large skillet on med/high heat, add olive oil and garlic. Cook for 30 seconds. Add sliced zucchini, cover and cook for 10 minutes or until soft.
Next, add shrimp and tomatoes to zucchini and cook another 3-4 minutes or until shrimp turns orange. Add salt, pepper and parsley.
Then, add cooked and drained pasta to the skillet with zucchini and shrimp and stir until combined.
