  • 2 8 oz cream cheese bars
  • 1 cup sugar, divided
  • 1/2 tsp vanilla
  • 1/4 cup heavy cream optional
  • 2 6 ct. packages mini graham cracker pie crusts
  • 2 eggs
  • 1 qt fresh strawberries
  • 1 juice of lemon
  1. Wash, hull and cut strawberries in half. Place them in a small sauce pan along with 1/2 cup of sugar and juice of one lemon. Cook on med/low heat for 20 min or so until the sauce reduces and becomes a little thick.

  2. Meanwhile, preheat oven to 350F.

  3. In a mixing bowl, add cream cheese, eggs, 1/2 cup of sugar, vanilla and heavy cream. Mix for 2-3 minutes. Scrape sides of bowl midway through. 

  4. When strawberry sauce is finished cooking, add 1/2 cup of strawberry sauce to the cream cheese mixture. Mix until combined. Scrape bowl and stir before removing. 

  5. Gently pour cream cheese mixture into graham cracker pie shells. Bake in 350F for 20-25 min or until middle is set. Let cool on counter for 15 min. Place in refrigerator for 2 hours before serving. 

  6. Top with strawberry sauce before serving.

Directions for a Whole Strawberry Cheesecake

Make this into one single cheesecake by doubling the batter and strawberry sauce. Make a graham cracker pie crust with 1 1/2 cups of graham cracker crumbs, 6 tbsp melted butter and 2 tbsp sugar. Press into a 9" spring form pan and bake for 10 min on 325. Let cool before filling with batter. Then, bake the whole cheesecake for 55-70 min (depending upon your own oven ) or until middle is set.
