Ingredients

  • 8 oz watermelon juice
  • 2 oz pineapple juice
  • 2 oz white rum or to taste
  • 8-10 fresh mint leaves
  • simple syrup recipe below (omit if using bottled watermelon juice
  • 1/2 cup crushed or cubed ice

Simple Syrup

  • 2 tbs sugar
  • 2 tbs water

Instructions

Simple Syrup

  • In a small sauce pan, on stove top medium heat, combine sugar and water and stir until the sugar is dissolved up to one minute. 
  • Crush mint leaves in each glass then add ice.
  • Mix all ingredients and pour over ice.

Pitcher Recipe:

Makes 6 Watermelon Pineapple Mojitos.
24 oz watermelon juice
6 oz pineapple juice
6 oz white rum
30 fresh mint leaves
3 cups of ice
Simple Syrup
6 tbsp sugar
6 tbsp water
Instructions:
  1. In a small sauce pan, on stove top medium heat, combine sugar and water and stir until the sugar is dissolved up to one minute.
  2. Crush mint leaves in each glass then add ice.
  3. Mix all ingredients and pour over ice. Garnish with mint leaves.

Skinny version:

Use fresh watermelon juice from a cut up sitting watermelon. Omit simple syrup. Add the low calorie sweetener of your choice.
