Celebrating Valentine’s Day doesn’t have to break the bank, nor does it require you to spend a whole afternoon in your kitchen baking a beautiful heart-shaped almond sour cream layer pound cake. But, if you’ve got the time, go for it!
I found Bauducco Vanilla Panettone on sale at the grocery store of just $3.99! So, I picked it up and thought of a great Valentine’s Day dessert I could make with it by adding a strawberry mascarpone filling, all of which was on sale by the way because of Valentine’s Day.
The fresh strawberries were so sweet, which living in Pennsylvania, is a big chance you take buying them in February. What I love about this recipe is that it’s super easy because you don’t have to bake the cake first and wait for it to cool.
You’re ready to start as soon as you get home with your groceries, which is exactly what I did.
First, make the strawberry mascarpone filling, then cut the cake, spread the filling, sprinkle it with powdered sugar, add a strawberry slice and drizzle chocolate syrup on it. That’s it! How easy is that?
It’s a fun no-bake strawberry dessert to make with kids and present to mom or dad on Valentine’s Day. Homemade gifts are the best!
Vanilla Panettone with Strawberry Mascarpone
Ingredients
- 26.2 oz Vanilla Panettone
- 8 oz mascarpone cheese
- 4 oz heavy cream
- 4 oz cream cheese
- 3/4 cup powdered sugar plus more for dusting
- 2 tsp vanilla extract
- pint fresh strawberries or more for garnish
- 3 tbsp chocolate syrup for drizzling
Instructions

First, add the heavy cream, mascarpone cheese and cream cheese to a large mixing bowl and mix with a mixer for about one minute. This will get the heavy cream and cheeses fluffy.
Then, add the powdered sugar and vanilla and mix until well combined- about 15 seconds.
Next, add in the diced strawberries or stir in. If mixing, mix only 10 seconds so the strawberries don’t shred. Set aside or put it in the refrigerator, covered until ready to spread.
Then, take the panettone out of the bag and wrapping and place it on a cutting board. Cut it lengthwise into one-inch thick pieces. Layer two on top of each other and then cut off the brown crusts. Repeat until you have full cake layers. Two layers are show in the picture below.
Then, spread the strawberry mascarpone filling onto the top and spread it evenly to the edges.
Then, remove the bottom layer and add it to the top layer as shown below.
Using a long serrated bread knife, cut into four equal parts- sandwich style. Be sure to wipe off the knife before cutting the second cut so you don’t get the filling on the cake. Your end result will be four cake sandwiches that are about four inches long and two-three inches wide. Repeat with cake layers and filling.
Next, dust the tops with powdered sugar.
Then, top each cake sandwich with one strawberry slice as shown below. Are you salivating yet?
Last, drizzle each serving with chocolate syrup. Garnish with leftover strawberries.
Bauducco Panettone
I bought Bauducco brand panettone at my local grocery store. I’m seeing panettone often now including at Costco. Panetonne is popular to give at Christmastime in Italy. It comes in many flavors and types, not just with raisins.
The type I used for this recipe is vanilla panettone by the Bauducco brand. You may also use pandoro which is similar and usually topped with powdered sugar. It has a different taste than panettone and is also very good.
However, Bauducco is a multi-national company located in Brazil but, it was started by an Italian immigrant- Carlo Bauducco.
Substitutions
- Use sponge cake, angel food or white cake for the cake layers.
- Use fresh raspberries instead of strawberries.
- Substitute melted milk, dark or white chocolate to drizzle instead of chocolate syrup.
- Use strawberry syrup instead of chocolate syrup.
This layer cake is perfect for an easy Valentine’s Day, no-bake dessert when you’re already preparing a three-course dinner for your family. They’ll love the strawberry chocolate flavors and love you for making it for them!
