Recipe for Turkey Salad Sandwich
I love making my Slow Cooker Turkey Breast with Gravy on weekends in the fall and winter months. The turkey comes out so juicy and delicious using the slow cooker.
I’ll use the turkey (or from the Thanksgiving turkey) leftovers to make this delicious turkey sandwich.
Speaking of Thanksgiving turkey, I use brine to take my turkey to taste heaven!!
That flavors comes through to the turkey leftovers and makes incredible turkey sandwiches.
This is also true for chicken. As a matter of fact, I used my citrus brine for chicken and made equally great chicken salad!!
I like to add a little bit of crunchy celery to my turkey salad along with some crispy smoked bacon! Doesn’t that sound delicious.
How to Make Bacon in the Oven
I find making bacon in the oven better than making it on my stove because I don’t have the grease splatters to clean on the stove.
I also think it cooks better in the oven than in the microwave. Again, I don’t get grease splatters and explosions in my microwave to clean. I like a clean microwave!
- First, preheat oven to 375F.
- Then, lie strips of bacon onto a baking sheet.
- Put in oven on middle rack and set timer for 15 min or 20 minutes for crispier bacon. (oven temps vary if not calibrated.)
- Drain bacon on paper towels.
How to Make a Turkey Salad Sandwich
Now that we have the turkey and the bacon, it’s time to make our sandwich!
Turkey Salad Sandwich Ingredients

- 2 cups cooked, shredded turkey
- 1/2 cup mayo
- 6 strips of bacon
- 2tbsp chopped celery
- 1/4 tsp lemon juice
- salt and pepper
- 4 slices of sandwich bread
- dill (optional but, adds good flavor)
I made dill optional in this recipe because not everyone likes dill or has it in their cupboard. I have so many spices. Some women have 30 nail polish colors, I have 30 spices! If you’re not familiar with dill, it’s called “dill weed” which makes it sound like something you want to kill.
I use dill in my Best Creamy Dill Red Skin Potato Salad and put it on salmon . Therefore, dill is not optional for me in this sandwich but, it maybe for you. You’ll still have a great-tasting sandwich without it. And, with bacon, how can it not be?
Low Carb Turkey Salad Recipe
This recipe can be made low carb by simply substituting lettuce leaves for the sandwich bread and using regular mayonnaise instead of light (light has a little more sugar.)

- Add dried cranberries.
- Add chopped pecans or walnuts.

Slow Cooker Italian Pulled Pork Sandwiches

Turkey Salad Sandwich
Ingredients
- 2 cups shredded turkey breast without skin and bone
- 4 slices sandwich bread
- 1/2 cup light mayonnaise
- 6 oz bacon or six strips
- 2 tbsp chopped celery
- 1/4 tsp lemon juice
- salt and pepper to taste
- 1/2 tsp dill optional
- 4 tomato slices optional
- 2 lettuce leaves optional
Instructions
- First, preheat oven to 375F.
- Next, put bacon strips on a baking sheet and put in oven for 15-20 min or until desired crispiness. You may also cook in microwave for 5 min.
- Then, drain bacon on paper towels.
- Next, cut 2 bacon strips into bite size pieces.
- Meanwhile, in a medium sized mixing bowl add all ingredients (except tomato and lettuce if using) and stir until well combined.
- Refrigerate 30 minutes.
- For each sandwich: Spread turkey salad onto one side of one slice of bread. Top with two bacon slices. Add tomato and lettuce if desired. Add one more slice of bread. Cut in half if you prefer.
