Tropical Fruit Salad with Vanilla Greek Yogurt
This delicious Tropical Fruit Salad has:
- vanilla Greek yogurt
- shredded sweetened coconut
- banana
- diced mangoes
- Mandarin oranges
- crushed pineapple with juice
- cinnamon
Substitute 30 oz of canned tropical fruit salad for the mangoes, pineapple and Mandarin oranges. I’m sure that would be great too! I just love the shredded coconut with these breakfast fruits.
If you think it isn’t sweet enough, just add some sugar or sugar substitute. I found it sweet enough but, I don’t put sugar in my coffee so, I may not be the best person to judge sweetness.
This fruit salad takes minutes to put together. The best part is there is very little peeling and chopping (just one banana.) I hardly call that work! Plus, you could store most of these ingredients in your pantry and pull them out to make this easy fruit salad in minutes if company drops in.
One summer, when my son was 1.5 yrs old and I was pregnant with my second son, we ate two watermelons with cantaloupe and strawberries per week! I was so tired of cutting up melons by the end of that summer!
Having two boys that love vanilla Greek yogurt, I have a stock of it in my fridge. You could use plain Greek yogurt or even lemon yogurt. Get creative. That’s what happens when I’m out of ingredients.

Ingredients
- 6 oz vanilla Greek yogurt
- 1/2 cup sweetened shredded coconut
- 1 banana, peeled and sliced
- 1/2 cup diced mangoes, draind
- 11 oz Mandarin oranges, drained
- 8 oz crushed pineapple with juice
- 1 dash ground cinnamon
- sugar (if needed to taste)
Instructions
- Add all ingredients to a medium bowl and stir. Can be served immediately. Refrigerate leftovers.
