This easy, low carb Philly cheesesteak recipe is full of delicious tender beef that’s flavored with sauteed onions and garlic then topped with melted cheese in bell peppers that will tantalize your taste buds and that of your entire family!
It’s gluten free and a quick and easy weeknight meal. Don’t feel guilty eating this low carb comfort food! Plus, they’re smaller portioned that’s perfect for game day appetizers.

Living near the city of Philadelphia ALL of my life, I know a lot about Philly cheesesteaks. As a matter of fact, I’ve become a bit of a connoisseur of cheesesteaks. So much, that they’re on my dinner rotation.
This easy recipe is very similar to my authentic Philly cheesesteak sandwich recipe. I have a few cheesesteak recipes on my website.

A real Philly cheesesteak is not made with Worcestershire sauce, nor is it ever made with ground beef! Steak is not ground beef!
The traditional Philly cheesesteak sandwich is made with ribeye steak however, that’s pricy especially these days. I use a good quality chip steak from my local butcher. Although, chip steak isn’t cheap either.
However, when you compare the cost to eating out, it’s significantly cheaper especially if you have a lot of family members and neighborhood kids who linger around for dinner.
What’s best about this cheesesteak recipe is that it’s low carb and therefore pretty much guilt free! As a matter of fact, I had to eat one while I was photographing them because I was so hungry and they smelled so good!
Trust me, this is a dinner the whole family will love!

Low Carb Philly Cheesesteak Recipe
Ingredients

- red or green bell peppers
- yellow onion
- garlic cloves
- extra virgin olive oil (EVOO)
- shaved ribeye steak or beef chip steak
- provolone cheese, American cheese or mozzarella cheese
- salt and black pepper to taste
- optional garnish: fresh parsley, sliced green onions, or a sprinkle of red pepper flakes for heat

First, preheat the oven: Set your oven to 375°F (190°C). Lightly grease a baking dish and set it aside.
Next, prepare the red bell peppers: Quarter the bell peppers and remove and discard the seeds and membranes. Arrange the pepper quarters in a single layer in the greased baking dish, cut-side up. Add salt to the insides of the cut bell peppers.
Then, heat EVOO in a large skillet over medium-high heat.
Then, sauté the onions and garlic: In the same skillet, add the chopped onions and cook for 4-5 minutes, or until softened and translucent. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Next, season the steak with salt and pepper, then add it to the hot skillet.
Add the steak and cook for about 2-3 minutes, until browned but not fully cooked through (it will finish cooking in the oven). I added cooked, sauteed mushrooms that I had in my refrigerator. Remove the steak from the skillet and set aside.
Then, assemble the peppers: Spoon the steak mixture into each red bell pepper quarter, filling them generously.
Bake at 375F for 20 minutes so the bell peppers can soften. Cook longer if you want them more tender. I cooked mine in my air fryer so the bell peppers would cook faster.
Because air fryers are smaller than conventional ovens, the cooking time will be shorter. If using your air fryer for this recipe, be careful not to place the rack to close to the heat or the tips of the beef can burn.
Next, place 1/2 of a slice of provolone cheese on top of each pepper or to your liking if you like extra cheese.
Then, put the cheese coated peppers back into the oven and bake for 5 more minutes so the cheese melts.
Last, garnish the peppers with fresh parsley, green onions, or a sprinkle of red pepper flakes for an extra kick. Serve hot and enjoy!
