Stuffed Pork Loin with Spinach
There’s no long and complicated ingredient list here. See the substitutions I suggest below.
Ingredients
- pork loin
- smoked provolone cheese slices
- sun dried tomatoes in oil
- fresh rosemary
- fresh spinach leaves
- garlic powder
- EVOO
- salt and pepper
You also need butcher string to tie the pork loin roast. You can use this string to tie beef also. For example, it’s used to tie bracciola.
I’ve used it whenever I need a strong string to hold something. I’ve even used it for crafts.
So, if you’re wondering if you’ll ever use it again, the answer is probably “yes.”
How to Make Stuffed Pork Loin with Spinach
Just follow the pictures and you’ll see how easy it is to make this tasty recipe!
- First, preheat oven to 350F.
- Then, cut the boneless pork loin in the shape of a “C.” That’ll help it fold over to close.
- Next, add the seasonings: garlic powder, salt and pepper.
- Then, add the sun dried tomatoes and rosemary.
- Next, add the spinach leaves. Just stack them as best you can.
- Then, add the smoked provolone cheese slices.
- Next, fold over the pork to close and tie with butcher string.
- Then, sprinkle the top with some more garlic powder, salt and pepper.
- Last, roast in oven at 350F for 1 1/2 to 1 3/4 hours. NOTE: Let sit 10 minutes before cutting.
Substitutions
- Use provolone cheese slices that are not smoked if you can’t find smoked.
- Feta cheese or smoked mozzarella cheese would also be great substitutions for provolone cheese.
- Use frozen spinach leaves in place of fresh but, drain (strain) it well of water first.
- Sun dried tomatoes without oil can be used but, add 2 tbsp of EVOO and let them sit in it for 10 minutes before adding to the pork loin.
- You may use 4 garlic cloves in the stuffing instead of the garlic powder if that’s all you have on hand.
- You may substitute 1 tsp of dried rosemary instead of fresh rosemary but, fresh is best.
- Italian Red Roasted Peppers would be great in place of the sun dried tomatoes!
What should a pork loin be cooked at?
For this recipe, cooking it at 350F is ideal to allow the center to be cooked thoroughly. The internal temperature measured with a meat thermometer at the thickest part of meat should read 145° for pork.
How do you tie up a pork loin?
Use butcher string (a.k.a. kitchen twine) to tie the pork loin. Cut two 10-12 inch long pieces of string and tie them one on each side to keep the stuffed pork loin closed while roasting.

- 2 cups fresh spinach leaves
- 8 oz sun dried tomatoes in oil drained of oil
- 6 slices smoked provolone cheese
- 1 sprig fresh rosemary
- 1 tbsp extra virgin olive oil
- 1/4 tsp garlic powder divided
- salt and pepper to taste
Instructions
- First, preheat oven to 350F.
- Then, cut the boneless pork loin in the shape of a "C." That'll help it fold over to close.
- Next, add the seasonings to the meat: garlic powder, salt and pepper.
- Then, add the sun dried tomatoes and rosemary.
- Next, add the spinach leaves. Just stack them as best you can.
- Then, add the smoked provolone cheese slices.
- Next, fold over the pork to close and tie with butcher string.
- Then, sprinkle the top with some more garlic powder, salt and pepper.
- Last, roast in oven at 350F for 1 1/2 to 1 3/4 hours. NOTE: Let the roast sit 10 minutes before cutting it. If juices run pink or center of meat is still pink, put back in oven another 15 minutes and recheck. The internal temperature measured at the thickest part of meat should read 145°.
