This delicious Italian soup is made with cheese tortellini, ground Italian sausage, spinach, tomatoes, carrots and onions in chicken broth. It’s a meal in one! Your family will love it.
This soup puts together some great flavors. The combination is so good- cheese tortellini with sausage, tomato in chicken broth and sausage with chicken broth.
All the flavors meld together to make a delicious hearty soup that you can serve for dinner. I’m no stranger to making homemade soup either so, trust me on this.

Spinach and Tortellini Soup with Sausage

Ingredients
- 10 oz tortellini
- 5 oz fresh spinach leaves
- 1/2 cup chopped onions
- 2/3 cup chopped carrots
- 5 minced garlic cloves
- 2 tbsp EVOO
- 64 oz chicken broth
- 16 oz ground Italian sausage
- 14.5 oz canned diced tomatoes with basil and oregano
- 1/2 tsp dried basil
After you saute onions, garlic, carrots in olive oil, you add the ground Italian sausage and break it up into pieces. I use a meat masher (which is great for ground beef too). Let the meat brown a bit.
Then, add the canned tomatoes with juice and chicken broth and cook for about 15 minutes. Next, add the frozen tortellini and fresh spinach and cook a few minutes longer.
It’s so easy!

Spinach and Tortellini Soup with Sausage
Ingredients
- 1/2 cup chopped onions
- 6 cloves garlic, minced
- 2/3 cup chopped carrots
- 1/2 tsp dried basil
- 2 tbsp extra virgin olive oil
- 16 oz ground Italian sausage
- 14.5 oz canned diced tomatoes, with juice with basil and oregano
- 64 oz chicken broth
- 10 oz frozen cheese tortellini
- 5 oz fresh spinach leaves
Instructions
- First, in a large pot, on med/high heat add onions, garlic, carrots, basil and olive oil. Cook for 3 minutes stirring occasionally.
- Next, add ground sausage. Break apart into small pieces. Stir and brown the sausage for 5 minutes.
- Then, add the chicken broth and tomatoes with juice. Cover and cook for 15 minutes.
- Next, add frozen tortellini and fresh spinach. Cook 5 more minutes.
