I’m no stranger to Italian cooking nor soup-making and making Italian soups is so fun!
Add some crusty Italian bread and you’ve got yourself a hearty dinner! It has everything in it to make a complete, tasty meal. It has meat for protein, beans for carbs and protein and various veggies for lots of nutrients. It’s a wholesome, family soup!
I use a marinated pork tenderloin to make this recipe which makes the prep easier and faster! Also, I make a delicious pork tenderloin in my air fryer!

Ingredients:
- 18.4 oz Hatfield Tuscan Herb Dry Rub Seasoned Pork Tenderloin marinated
- 1/2 cup chopped onion
- 3 cloves of minced garlic
- 1 cup sliced carrots, 1/2″ round pieces
- 2 tbsp extra virgin olive oil
- 3 slices bacon, cut into 1″ pieces
- 5 cups of chopped kale leaves
- 14.5 oz canned diced tomatoes with basil and oregano, with juice
- 31 oz Cannellini or Great Northern Beans
- 3 cups of low sodium chicken broth
Instructions:
- First, remove pork from package.
- Next, place all ingredients as described above in a 6 qt or larger slow cooker.
- Then, set slow cooker to high setting and cook for 4 hours.
- After four hours, the internal temperature of the pork should reach 145°F. Shred the meat with a fork. Serve the soup out of your slow cooker for buffet style or put it in bowls to serve.
