This Slow Cooker Salsa Chicken Recipe is SUPER EASY! It’s made with just 4 Ingredients and tastes delicious! It comes in handy when your pantry is running low. It’s a gluten-free, low-fat, low-calorie, gluten-free family dinner for nights you don’t have time to cook.
This recipe is so easy that I’d trust my husband to do it without him being able to call me to ask questions. LOL! That’s how EASY it is. And, if you have a liking for salsa, you’ll be wondering why you never had this dish before. Yes, it’s all over Pinterest BUT, this recipe has just a couple more simple ingredients that give it extra flavor.
It’s a meal your whole family will likely eat! How awesome is that? Not having to cook separately for your kids.
It’s a great meal to make on summer vacation– camping or at the beach to save money on eating out. It’s perfect to make when you don’t have much in your pantry but, a jar of salsa. As a matter of fact, I know keep a large jar on hand to make this easy chicken dinner for times I’m in a pinch.
Slow Cooker Salsa Chicken Recipe -4-Ingredients
This is one of my new FAVORITE DINNERS because it’s so stupid simple, everyone eats it PLUS, it’s even HEALTHY! It’s low-carb, (yay!) low in fat and calories (another yay) gluten free AND it’s high in protein. It’s really awesome for all of these reasons plus it’s budge friendly because you don’t have to buy a bunch of ingredients.
You can also make it with chicken thighs instead to make it even cheaper. It’d be yummy with boneless, skinless chicken thighs too.
I highly recommend making Jasmine rice with this chicken dinner. It compliments it really well. I make the rice in my Instant Pot in about 15 minutes with natural release.

How long does Salsa Chicken last in the refrigerator?
Cooked, Salsa Chicken will last up to 5 days. Uncooked, I’d only go as far as three days or as long as the chicken is fresh. Bad chicken is what would spoil it.

Slow Cooker Salsa Chicken-4-Ingredients
Equipment
- slow cooker
Ingredients
- 1 lb boneless, skinless chicken breast
- 24 oz plain salsa mild, medium or hot
- 1 tbsp extra virgin olive oil
- 1/8 tsp garlic powder
Instructions
- First, set the slow cooker on low setting.
- Then, place chicken breasts on the bottom of the slow cooker.
- Next, sprinkle garlic powder on top of the chicken.
- Then, pour salsa on top of the chicken. It's o.k. if some of it falls off the sides.
- Add olive oil on top of salsa and cover. Cook on low for 4 hours.

Make ahead instructions:
Make ahead by putting all the ingredients into the slow cooker ceramic insert and placing it in your refrigerator the night before. Or, if you don't have room in your refrigerator, place all ingredients in a one-gallon zipper plastic bag and dump into slow cooker when ready to cook.What to serve with Salsa Chicken:
