This is what I call an impressive Sunday dinner that’s simple to put together, even for a beginner. Sometimes, I’ll add this one-pan meal to my summer vacation meal plan.
It’s incredible when I can serve a great-tasting meal with little effort. I know you’re thinking “You can say that again!”

Roasted Pork Loin with Fennel Seeds & Potatoes
Making this simple pork main dish is easy! Just peel and cube the potatoes to about 1 1/2″ cubes.
Note: If you cut them bigger, they’ll take longer to cook in the oven.
Then, add some EVOO, salt and pepper to the potatoes.
Next, give your pork loin a rub down! Rub EVOO on the pork loin and sprinkle with garlic powder followed by the fennel seeds.
Then, bake it on 400F for 25 minutes and then flip over and bake for another 45 minutes.
That’s it! With just ten minutes of prep, you can have a restaurant-quality meal and everyone will want seconds.
Substitutions
- Use a pork tenderloin instead of pork loin.
- Use baby potatoes and just cut them in half without peeling them for a quicker prep time.
- Add chopped onions to the potatoes.

Roasted Pork Loin with Fennel Seeds & Potatoes
Ingredients
- 3 lb pork loin or tenderloin
- 4 medium potatoes
- 2 tbsp extra virgin olive oil
- 2 tsp fennel seeds
- 1/4 tsp garlic powder
- salt and pepper to taste
Instructions
- First, preheat oven to 400F.
- Then, peel and cut potatoes into 1 1/2" cubes. (If they're bigger they'll take longer to cook.) Coat potatoes with 1 tbsp EVOO, salt & pepper to taste.
- Next, rub 1 tbsp of EVOO on the pork roast followed by garlic powder. Top with fennel seeds.
- Then, bake in 400F oven for 25 min and then flip the pork roast over. Bake another 45 min or until no longer pink inside
