Roasted Italian Chicken with Potatoes and Peppers

This tasty Italian style chicken with potatoes and peppers recipe is made with roasted chicken thighs, potatoes, bell peppers, onions and seasonings. It’s a complete meal in one the whole family will love! Plus, it’s gluten-free.

This is basically a sheet pan Italian chicken recipe. It’s very similar to my Italian Sausage, Potatoes, Peppers and Onions recipe which is a well-liked family meal in our house. Seeing the comments I get for it on Pinterest, it seems many others agree.

We’re all looking for easy dinner recipes, especially family-friendly recipes! There just aren’t enough of them if you like to cook mostly from scratch like I do. It’s just healthier and cheaper. 

Bone-in chicken is less expensive than boneless chicken and that’s a way to save on your grocery bill. It does make the cooking time longer.

Also, if you have picky eaters in your family, they can easily pick out the things they don’t care for like onions. They’re going to love this juicy chicken!

Italian Style Chicken with Potatoes and Peppers

I find the bell peppers and onions to be a nice addition to this dish as it goes well the juicy chicken and potatoes making it a tasty and easy chicken dinner.

Ingredients

  • chicken thighs 
  • Russet potatoes
  • green bell pepper
  • red bell pepper
  • onions
  • garlic powder
  • Italian seasoning
  • fresh rosemary
  • extra virgin olive oil

Instructions Summary

First, preheat oven to 375F.

Then, clean and cut the vegetables into bite-sized pieces. 

Put all ingredients into a large bowl and stir together so the olive oil and seasoning coats the chicken, potatoes, onions and peppers. I find it easier to do in a bowl rather than directly on the baking sheet so that the raw chicken juices don’t fall over the sides and onto my countertop.

Then, put the contents of the bowl into a large roasting pan or baking sheet. Try to arrange the chicken and veggies into a  single layer for even cooking.

Then, bake until the chicken and potatoes are golden brown -about 45 minutes or when the internal temperature of the thickest part of the chicken reaches 165F. Let rest 5-10 minutes before serving.

Substitutions

  • Instead of russet potatoes, use Yukon gold potatoes, baby potatoes, or red potatoes
  • Use yellow or orange bell peppers instead of green and red.

Make Ahead 

If you want to make this chicken dish ahead. You can add all of the ingredients to the pan except for the potatoes. Peel them, cut them and place them in a bowl of water so that they’re submerged until you’re ready to use them within 24 hours.

Then, just drain them in a colander and put them in with the other ingredients to bake. 

What’s great about this chicken and potatoes recipe is you can use any chicken pieces you like such as chicken breasts, wings or drums. However, the cooking time will vary and it may take longer to bake. 

I’ve even used boneless, skinless chicken thighs to make this dish with a shorter cooking time.

What to Serve with Italian Style Chicken

Sauteed Broccoli Rabe

Italian salad such as Arugula Salad with Lemon Vinaigrette and Shaved Parmesan

Storage

Store leftovers in an airtight container in the refrigerator for 1-2 days for maximum freshness.

This chicken dinner is easy to make in one pan without a whole lot of prep. It’s a chicken dish the whole family is sure to devour and night of the week so add this easy recipe to your list of family dinners.

  • Then, peel the potatoes, rinse them and cut them into 1 inch or so cubed pieces.
  • Put all ingredients into a large roasting pan or baking sheet (or a large bowl first) and stir together so the olive oil and seasonings coat the chicken, potatoes, onions and peppers. Try to arrange the chicken and veggies into a  single layer for even cooking.
  • Then, bake until the chicken and potatoes are golden brown -about 45 minutes or when the internal temperature of the thickest part of the chicken reaches 165F. Let rest 5-10 minutes before serving.
