How to Make Puff Pastry Pesto Chicken Bites Appetizer

First, preheat oven to 375F.
Then, cut the puff pastry into 3 inch by 2 inch rectangles and place into a mini muffin pan.
Next, fill each puff pastry with chicken filling. Fold puff pastry over to slightly close.
Last, bake in 375F oven for 15 min.

You Don’t Have Cooked Chicken?
If you don’t already have cooked chicken, it is easy to poach it. Just put a skinless, boneless chicken breast in a small pot with water covering it. Simmer on med/high heat for 15 until no longer pink inside. This chicken will be moist and tender. If you so fancy, add half of an onion to the water to add some nice flavor to the chicken.
If you plan on making these for party, plan on them disappearing. Even those who aren’t pesto fans can appreciate these because the pesto taste is not dominate. The sun dried tomatoes add a nice flavor to balance the pesto. Cream cheese is what makes this appetizer irresistible!

- 1 large cooked chicken breast shredded
- 2 puff pastry sheet cut into 3" long by 2" wide pieces
- 8 oz of cream cheese softened
- 4 oz of shredded mozzarella cheese
- 2 tbsp pesto sauce
- 4 tbsp sun dried tomatoes in olive oil chopped
- 1/8 tsp of garlic powder
- salt and pepper to taste
Preheat oven to 375F.
In a medium size bowl, combine all ingredients except puff pastry. Mix well.
Put puff pastry rectangles into mini muffin tin.
Fill each puff pastry with chicken filling. Fold puff pastry over to slightly close.
