First, preheat oven to 375F.
Next, in a medium size bowl, combine cooked shredded chicken, pesto, cream cheese, sun dried tomatoes, shredded mozzarella cheese, garlic powder, salt and pepper. Mix well.
Then, cut the puff pastry into 3 inch by 2 inch rectangles and place into a mini muffin pan.
Next, fill each puff pastry with chicken filling. Fold puff pastry over to slightly close.
Last, bake in 375F oven for 15 min.

Simmer on med/high heat for 15 until no longer pink inside. This chicken will be moist and tender. If you so fancy, add half of an onion to the water to add some nice flavor to the chicken.

Ingredients
- 1 small cooked chicken breast shredded
- 2 puff pastry sheet cut into 3" long by 2" wide pieces
- 8 oz of cream cheese softened
- 4 oz of shredded mozzarella cheese
- 2 tbsp pesto sauce
- 4 tbsp sun dried tomatoes in olive oil chopped
- 1/8 tsp of garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 375F.
- In a medium size bowl, combine all ingredients except puff pastry. Mix well.
- Put puff pastry rectangles into mini muffin tin.
- Fill each puff pastry with chicken filling. Fold puff pastry over to slightly close.
- Bake in 375F oven for 15 min.
Notes
Make Ahead Instructions:
- Make chicken filling ahead, store in fridge.
- Then, place in puff pastry.
- Last, bake in oven per recipe directions.

I made these for a party we went to tonight and they were very popular. I added about a quarter cup of toasted pine nuts to the filling which made it extra good. I had about half of the filling left over, even though they were filled just right. I froze the leftover filling to use next time I make these.

To make this recipe ahead, prep them but don’t bake them until you’re ready to serve them (in the same day.) you can reheat leftovers but they won’t taste quite as good and the same goes for freezing leftovers. Don’t let that discourage you though because you may not have leftovers.
