You Don’t Have Cooked Chicken?
If you don’t already have cooked chicken, it is easy to poach it. Just put a skinless, boneless chicken breast in a small pot with water covering it.
Simmer on med/high heat for 15 until no longer pink inside. This chicken will be moist and tender. If you so fancy, add half of an onion to the water to add some nice flavor to the chicken.
If you plan on making these for party, plan on them disappearing. Even those who aren’t pesto fans can appreciate these because the pesto taste is not dominate. The sun dried tomatoes add a nice flavor to balance the pesto. Cream cheese is what makes this appetizer irresistible!

That’s a great idea to add pine nuts. Now you have a head start into making them again. Thanks for the comment and glad they were a hit!
I made these for a party we went to tonight and they were very popular. I added about a quarter cup of toasted pine nuts to the filling which made it extra good. I had about half of the filling left over, even though they were filled just right. I froze the leftover filling to use next time I make these.
To make this recipe ahead, prep them but don’t bake them until you’re ready to serve them (in the same day.) you can reheat leftovers but they won’t taste quite as good and the same goes for freezing leftovers. Don’t let that discourage you though because you may not have leftovers.

These sound wonderful! To make ahead, should they be baked first, then reheated? What about freezing? Thanks! I just found this site and really like it!!.,
