I hurried home after picking up the kids today and couldn’t wait to eat lunch. My 3 yr old is asking if he can play with Play Dough and all I can think about is how fast I can feed them so I can eat. Play Dough is so messy…maybe he’ll forget after lunch. Nope, he didn’t. Meanwhile I’m making this yummy looking sandwich with prosciutto, and fresh mozzarella cheese, which is one of my faves. Then, I cut up a fresh garden tomato, right from our own garden. As if that wasn’t good enough, I made a delicious Easy Creamy Avocado Lime Spread in 3 Min! to put on it. I topped it with arugula and viola! This incredible Prosciutto, Tomato, Cheese and Arugula Sandwich with Avocado Spread was born! Oh, my! This was a delectable tasting sandwich!

So, then at that very moment, I knew I’d have to blog about it! This sandwich was just looking too good to go not photographed…unnoticed to the world wide web. That just wouldn’t be fair to, well the world! It’s a cross between prosciutto and arugula pizza -and- a Caprese sandwich without the basil. Whatever, you want to call it, it is fabulous! I’d rather eat this sandwich any day over a greasy, fast food low quality burger on the Dollar Menu, if that’s still around.

How to Make the Prosciutto, Tomato, Cheese and Arugula Sandwich with Avocado Spread
This taste of Italy sandwich is comprised of Prosciutto di Parma, mozzarella cheese, crusty Italian bread because to me, there is no other, all of which I bought from Costco, red ripe garden tomatoes, from our own garden and arugula. The Easy Creamy Avocado Lime Spread in 3 Min is made with fresh avocado, fresh lime juice, mayo, garlic powder, salt and pepper. The full recipe is at the bottom of this post.

It’s super easy and quick! It would take more time to sit through the drive thru at lunch time! this sandwich is so much healthier even with the white bread. You can substitute whole grain bread if you choose.

So, I finally did finish the photo shoot and devoured the sandwich! All is good with a full belly of goodness. Then I got out the Play Dough for my son. A happy 3 yr old makes for a happy mommy too. But, Play Dough pieces all over the floor, not so much.

This yummy Prosciutto, Tomato, Cheese and Arugula Sandwich with Avocado Spread only takes minutes to make. The pairing of prosciutto and fresh mozzarella cheese with red ripe tomatoes, arugula and avocado are a great lunch combination. The creamy, lime-flavored avocado spread really adds a lot of flavor.

Prosciutto, Tomato and Arugula Sandwich with Avocado Lime Spread
Ingredients
- 4-6 thin slices of Prosciutto di Parma or good quality prosciutto
- 2 crusty Italian bread rolls
- 4 slices of tomato
- 2 slices fresh mozzarella cheese cut in half
- handful of Arugula
Easy Creamy Avocado Lime Spread in 3 Min!
- 1 med size avocado pit removed and mashed with a fork
- 4 tsp mayonnaise
- 2 tsp fresh lime juice
- dash garlic powder
- salt and pepper to taste
Instructions
- Combine and stir the Avocado spread ingredients until smooth.
- Arrange the sandwich as follows: avocado sauce, mozzarella slices, tomato slices, prosciutto slices and top with arugula. Enjoy!

This would be a perfect sandwich for today – it’s a little cold and overcast (well if low 70’s are cold – it seems cold after how hot it’s been!) and that looks like it’s so packed with flavor and comforting!
