The flavors of coconut and pineapple will do that to you… I wish I was in the Caribbean, on the beach having this drink delivered to me by a handsome local named Ricardo. Oh, back to reality… Good bye Ricardo. This cocktail is so refreshing on a hot day. It’s a yummy blend of fruit juices and liquors that’s not too sweet and still tastes very tropical.

Pineapple Coconut Rum Cocktail
Fruity cocktails are so fitting to drink in the summer. Using freshly squeezed fruit juices would make this cocktail taste even better!
It’s easy to make just one of these cocktails but, just as easy to make a pitcher for a party. You can make it ahead and just add ice prior to serving. Pitcher directions are included in the recipe card- notes section.
You can make this Pineapple Coconut Rum Cocktail a mocktail by omitting the liquors and adding some coconut extract instead.
This drink is great for bridal showers, BBQs or any summer parties. But, why limit it to summer. This drink is tasty all year-round. This is a drink I like to drink when I’m on my deck and my husband is cutting the grass. He works…and I watch!
You won’t need Tom Cruise to make you this cocktail. It’s so easy. Make a pitcher.
Directions:
To make this Pineapple Coconut Rum Cocktail, start with a cute cocktail glass which, I found on Amazon or put it in a cocktail shaker.
Fill it with ice cubes and then add 1 oz of vodka followed by 1 oz of coconut rum.
Then, add 4 oz of pineapple juice and 2 oz of Lemonade with raspberry juice.
Next, add a splash of Chambord (raspberry liquor.)
Last, stir well and pop a paper umbrella in that fabulous drink!

Pineapple Coconut Rum Cocktail
Ingredients
- 4 oz pineapple juice
- 2 oz lemonade with raspberry juice
- 1 oz coconut rum
- 1 oz vodka
- splash Chambord Raspberry liquor
- 8 oz ice cubes
- 1 slice fresh pineapple for garnish
Instructions
- Fill an 8 oz glass with ice cubes. Add all ingredients and stir. Garnish with pineapple slice.
