Potato Side Dishes
Roasted potatoes are one of the best and easiest potato side dishes! Don’t you just love the crispy brown edges? I know I do.
They’re so easy to make and ready in just 25 min! Potatoes are so versatile and popular so they’re a great go-to side dish. Just like my Air Fryer Garlic Parmesan Potatoes, this recipe is tasty!
At only 130 calories per serving, you won’t need to feel guilty eating these delicious Parmesan Rosemary Air Fryer Roasted Potatoes! I can even call them healthy because they aren’t deep fried and use little oil.
I just love how the air fryer makes potatoes crispy. However, you can make this recipe in the oven! Cutting the potatoes thin and roasting them at 400 should get you a similar crispness.
I never met a potato I didn’t like. They are my absolute favorite vegetable. Fresh cut French Fries, YUP! Mashed potatoes with gravy (I’ll go put on my fat pants first,) oh yeah, crispy roasted potatoes, no mercy!

These roasted potatoes would be great served next to Grilled Lemon Rosemary Chicken or Apricot Ginger Steakhouse Pork Chops. But, roasted potatoes go with A LOT of main dishes from a beef pot roast to Maryland Lump Crab Cakes.
Using an air fryer sure does cut down on the fat and calories. Therefore, I feel confident calling this a healthy recipe! An Air Fryer makes a great gift especially for those trying to lose weight or keep it off.
However, I have a Power Oven Air Fryer that has shelves in it with an oven door. I like it a lot and even use to heat up waffles in the morning for my kids.
How to Make Parmesan Rosemary Air Fryer Roasted Potatoes
This roasted potatoes recipe is super easy.
- Cut the potatoes.
- Season them and add a little bit of oil.
- Put them in your air fryer!
Twenty minutes later you’ll have golden brown, crispy and delicious roasted potatoes that are perfect for weeknight dinners!
- You can use a variety of potatoes- Russet, all-purpose, red potatoes or Yukon Gold.
- Use any oil you like but, olive oil gives this roasted potatoes recipe a nice flavor.
- Store leftovers in the refrigerator.
How to make Parmesan Roasted Potatoes in a Conventional Oven
Note: The potatoes may not be as crispy as using an air fryer but, they’ll be just as yummy!
Follow the same instructions except roast them at 425F for 30 minutes or so. Make sure the potatoes are cut thinly as described below.

Substitutions:
- Although fresh rosemary is best, you can substitute 1 1/2 tsp dried rosemary.
- Use fingerling potatoes, Russet potatoes , Yukon Gold potatoes, or sweet potatoes.
- Use corn, canola or vegetable oil if you don’t have olive oil.
- If you don’t have grated Parmesan cheese, use shredded Parmesan cheese and place it on potatoes before the last 3 minutes are done or until melted.

Parmesan Rosemary Air Fryer Roasted Potatoes
Equipment
- Air Fryer
Ingredients
- 1 lb potatoes
- 1 tsp fresh rosemary, minced
- 1 tbsp grated Parmesan cheese
- 1/8 tsp garlic powder
- 1/4 tsp onion flakes
- 1 tbsp olive oil
Instructions
- First, wash the potatoes and dry them. Cut them to about a 1/4" thickness.
- Next, add cut potatoes into a mixing bowl. Add remaining ingredients and combine to coat the potatoes.
- Last, put coated potatoes in the air fryer on 400F for 20 minutes.

Hi Carol. Feel free to add as much oil and salt as you’d like. I found the oil listed in the recipe sufficient. As you can see, mine came out very crispy. I’m sorry you didn’t get the same results.
Followed recipe. Seemed like they needed a bit more oil; turned out dry and not very crispy. Needed salt!

These were wonderful! I followed the recipe exactly except I used dried rosemary. I have an Instant Pot with the Air Fryer Lid so I couldn’t spread them out in a single layer. Instead of doing two batches, II dumped them all in and stirred twice during the air frying process. I had to add about a minute to get them all crispy.

Do you have to use fresh rosemary or is there a dried equivalent?
Hi Kim. I have an air fryer with shelves and I lie them on each shelf, spread out. I use the air fryer setting. Hope this helps.
Do you lay these out on the shelves/trays of your air fryer? Do you use bake or air fry setting?

How would I make this recipe in a regular oven? It looks wonderful and I have all th ingredients, but no air fryer!
