This blueberry cream pie is full of blueberry flavor! It’s similar to my delicious Strawberry Icebox Pie.
You can also eat this pie it cold instead of frozen if you wish. It tastes great either way. My husband loves it frozen!
Plus, this recipe is easy to double. Take one to a potluck and keep one in your freezer! This is a great recipe to make on vacation when you only want to use a few ingredients. Add it to your vacation meal plan and always rent a place with a dishwasher! But, I’m sure I didn’t have to tell you that.

No Bake Blueberries and Cream Ice Box Pie
So let’s get to the part about how to make this delicious blueberry ice box pie recipe! It’s so easy.
In a nutshell, here’s what you do:
- Make the blueberry sauce by cooking fresh blueberries and sugar. Then add corn starch to thicken.
- Make the whipped cream by adding sugar to heavy cream.
- Stir together sweetened condensed milk, whipped cream and blueberry sauce. Pour in pie shell and freeze for 4 hours!
How easy is that? Eat this cake frozen or refrigerated. It’s your choice because both ways taste great! Don’t you just love choices?
No-Bake Blueberries & Cream Icebox Pie

NOTE: This no-bake recipe is easy to double! Then you won’t have to discard the rest of the condensed milk. Make two pies, take one to a potluck and leave one in your freezer!
Ingredients:
- 1 1/2 cups fresh blueberries
- 1/4 cup white granulated sugar
- 1 tbsp corn starch
- 7 oz sweetened condensed milk
- 8 oz heavy cream
- 1/4 cup powdered sugar
- 6 oz graham pie crust or shortbread pie crust
Instructions:
- First, in a small saucepan on med/high heat, add white granulated sugar and blueberries. Heat until it starts to bubble and cook about 5-10 minutes. Remove from heat. Stir in 2 tablespoons of corn starch to thicken the blueberry sauce. Let cool.
- Next, in a large mixing bowl add heavy cream and powdered sugar. Using a mixer, mix on high until it becomes the consistency of whipped cream. It will take a few minutes.
- Then, add the condensed milk to the whipped cream along with the blueberries. Stir together by hand until well combined.
- Next, pour the mixture into a graham or shortbread pie crust, cover and put in your freezer for 4 hours. Serve frozen but, this pie can be stored and eaten from the refrigerator.
Shortcut: You may use blueberry pie filling instead of making the blueberry sauce. Just mix the blueberry pie filling into the whipped cream and condensed milk.

This blueberry icebox pie looks REALLY GOOD! I definitely want to make it this summer, but I’m a little confused because in the list of ingredients it lists 1 Tablespoon of corn starch, but in the instructions it says to add 2 Tablespoons of corn starch. I suppose you could do either/or and it wouldn’t make that much of a difference. Please help. Thanks
