This Mediterranean Orzo Pasta Salad has serious flavors in it. I absolutely LOVE it. What’s more is that it’s easy-to-make too, just like my Lemon Orzo Pasta Salad.
It’s great to eat on hot summer days and is a quick weeknight dinner side dish. But, you can also make this for parties. It’s a great potluck side dish especially because it’s vegetarian but, the meat-eaters won’t notice.

Mediterranean Summer Salad
This pasta salad recipe is an easy-to-make side dish and I’ll show you just how easy it is. Here’s a pic of the sun dried tomatoes. Click on the image to purchase it on Amazon.
Ingredients
- 1 cup of cooked orzo pasta, drained and rinsed with cold water
- 1/2 cup sun dried tomatoes in oil, reserve 2 tbsp of oil
- 1/2 cup pitted Kalamata olives, drained and halved
- 1/2 cup crumbled feta cheese
- 1 1/2 tbsp chopped flat leaf parsley
- 1/4 tsp garlic powder
- salt and pepper to taste
Instructions
Add all of the ingredients to a medium sized mixing bowl and stir to combine.
If you’re wondering why you will rinse the pasta in cold water, it’s simply to reduce the heat of the pasta.
You may also wonder why I use the oil from the sun dried tomatoes in this recipe instead of adding olive oil. The answer is simply that the oil the sun dried tomatoes is well-flavored and perfect to use as additional seasoning.
Substitutions
- Use acini di pepe pasta if you don’t have orzo.
- You may add oil to dry sun dried tomatoes and soak them to use for this recipe. Use the oil as well.
- Use curly parsley if you don’t have flat leaf parsley.
- If you don’t have parsley, oregano is a great substitute.
This Mediterranean Orzo Pasta Salad is flavorful side dish you can make as a dinner side dish or double the batch and make it for a potluck dish to bring to a party. It will be a hit!

Ingredients
- 1 cup orzo pasta
- 1/2 cup sun dried tomatoes in oil, chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup pitted Kalamata olives, drained and halved
- 2 tbsp oil from sun dried tomatoes
- 1 1/2 tbsp chopped flat leaf parsley
- 1/4 tsp garlic powder
- salt and pepper to taste
Instructions
- First, cook orzo pasta for 10 minutes, drain and rinse with cold water.
- Meanwhile, add olives, sun dried tomatoes, oil, feta cheese, parsley, garlic powder and orzo when ready. Stir to combine.
