Ingredients

  • 16 oz Hatfield Recipe Essentials Chorizo Sausage (or Hatfield Recipe Essentials Italian Sausage)
  • 6 eggs
  • 1/2 cup heavy cream
  • 4 oz can of sliced mushrooms, drained
  • 1 cup shredded cheddar cheese
  • fresh chopped parsley (optional)

Instructions

  1. Preheat oven to 375F.

  5. Add chopped mushrooms to the egg mixture and stir.

  7. Spoon mixture into an oil sprayed mini muffin tin.
  8. Bake at 375F for 15 minutes. Let cool a few minutes before serving and sprinkle with chopped parsley.

Storage:
