- 2 Success® Boil-in-Bag Jasmine Rice
- 2 cups asparagus, cut into 1″ pieces
- 12 oz coconut milk (canned)
- 2 tbsp extra virgin olive oil
- 1 tsp fresh ginger, minced or 1/4 tsp ground
- 2 tbsp fresh lime juice
- 1 lb large shrimp, peeled and deveined
Instructions:
- First, cook Success® Boil-in-Bag Jasmine Rice according to package directions. Use two quarts of water.
- Meanwhile, in a large skillet on med/high heat, add olive oil and heat for 30 seconds.
- Next, add asparagus to the skillet and cook for one minute.
- Then, add coconut milk, ginger, lime juice and shrimp to the skillet. Cook for 5 minutes or until the shrimp has turned orange.
- Last, add cooked and drained rice to the skillet. Stir until combined.

How much rice is needed when one cooks rice from bulk and not the premeasured boil in a bag? I have rice in that form. Thanks!

Made this and it was a hit with the little ones too! It’s definitely not bold but light and refreshing with a little more lime juice (if you like that). Will definitely make it again
Hi Christine. This type of recipe by nature is not bold in flavor as coconut is quite mild. You could add 1/8 tsp of garlic powder or 3 minced garlic cloves. You could also add some more lime juice and ginger. The lime juice should be added at the same time as the ginger. Thanks for letting me know I forgot to add the lime juice in the instructions. I added it.
I was disappointed to discover this recipe was quite bland. Also it calls for fresh lime juice but does not say where or when to add it. I am trying to think of what to add which will give it more flavour.
