Well, I’m no stranger to Italian soup as my Homemade Italian Wedding Soup a.k.a. Minestra Maritata is a beloved family recipe that is always welcomed at Christmas dinner.
Homemade soups are the best because they’re fresh and you can control the amount of sodium and the quality of ingredients.
And I love making soup in my Instant Pot because it’s faster. I used to worry about overcooking pasta or having beans explode but, honestly that hasn’t happened.
This vegetarian Instant Pot Minestrone Soup recipe is full of wholesome goodness. It has four main components- broth, veggies, pasta and beans. It’s nutritious and filling and of course yummy!

Vegan Minestrone Soup Instant Pot
Minestrone soup can easily be turned into Vegan simply by using vegetable broth instead of chicken broth. Vegetable broth tastes great in this recipe.
You’re going to need this list of ingredients but, look for the recipe substitutions below too as you may want to tweak it a bit based on what’s in your pantry.
Ingredients
- onions
- celery
- carrots
- garlic
- vegetable broth
- extra virgin olive oil
- ditalini pasta
- cannellini beans
- dice tomatoes with juice
- spinach leaves
- Italian seasoning
- salt and pepper
Instructions
- Add celery, onions, carrots, minced garlic, olive oil and seasonings to Instant Pot and set the saute function on for 6 minutes. Stir when it starts to sizzle.
- When timer is up for saute function, add the vegetable broth, tomatoes with juice, pasta, drained beans and spinach leaves. Set on high pressure for 5 minutes. Manual release pressure and stir before serving.
TIP: I wouldn’t add more pasta in this recipe than it calls for because the pasta will absorb too much of the broth. This will be apparent after it sits in the refrigerator.

Is minestrone soup healthy for you?
This soup is full of vegetables with beans. It’s low in fat and calories and would be considered “healthy” by a good many. However, if you’re following a low carb diet, you may feel otherwise. Due to the pasta and beans, it contains a good bit of carbohydrates.
How do you add flavor to minestrone soup?
Adding Italian seasoning, olive oil and the vegetables, specifically onions and garlic, will give it a nice flavor.
What’s the difference between pasta fagioli ad minestrone soup?
Minestrone soup has far more vegetables than pasta fagioli which is mostly pasta and beans with onions and celery for flavoring. Pasta fagioli also isn’t has less broth than soup.
Substitutions
- Mini shells or orecchiette pasta can be used instead of ditalini pasta.
- Use chicken stock instead of vegetable stock (It will no longer be vegetarian but, if that’s what you have on hand, you may use it.)
- Use Great Northern beans, red or dark red kidney beans or pinto beans instead of cannellini beans
- Kale can be used instead of spinach.
- I used Hunts diced tomatoes seasoned with basil, garlic and oregano instead of plain diced tomatoes.

- 2 tbsp extra virgin olive oil
- 1/2 cup chopped onion 1/2 medium onion
- 1/4 cup chopped celery 1-2 ribs
- 1 cup chopped carrots about 2 carrots
- 4 cloves minced garlic
- 1/4 tsp Italian seasoning
- salt and pepper to taste
- 6 cups vegetable broth chicken broth can be used instead
- 14.5 oz diced tomatoes with juice
- 1/2 cup ditalini pasta or similar small pasta
- 15 oz cannelini beans (drained) or Great Northern Beans or red kidney beans
- 4 cups fresh spinach leaves
Instructions
