Yet, you know spring is on the way and you have only a couple months to shed the rest of the winter weight. So, you’re looking for low-carb recipes before you have to dig out a pair of shorts!
Instant Pot Cauliflower & Bacon Soup is so extremely flavorful that you won’t even notice there aren’t any potatoes in it! No fancy ingredients in this here soup! Nope!
I made this soup in about 20 minutes with my pressure cooker but, you can make just as easily on the stove top too.
This recipe is Keto approved and gluten free too. BUT, you don’t have to be following a low-carb diet to find it absolutely delicious and satisfying. Ask my husband. There’s enough bacon and cheese in this soup to make any meat-eating man happy and want seconds.
And using the Instant Pot to make this simple and delicious soup makes it even easier!

Instant Pot Cauliflower & Bacon Soup
Having an Instant Pot makes life easier! It enables me to make dinner quicker with only one pot to clean. I love that it has multi functions and can totally see why so many people have one. After working a long day, you just want to feed your family and eat a home cooked meal without a pile of dishes to wash afterward! Right? Amen to that!
I’ve used it to make Hamburger Soup, Tuscan White Bean & Pork Stew, potatoes, and cook a whole chicken, just to name a few! You can even boil eggs and make yogurt in it but, haven’t tried that yet.
How to Make Instant Pot Cauliflower & Bacon Soup
Ingredients:
- 1 head cauliflower florets
- slices bacon, chopped
- 1/4 cup onion, chopped (or half of an onion)
- 1 tbsp butter
- 4 oz cream cheese (full fat or 1/3 less fat but, not fat free)
- 1 tsp extra virgin olive oil
- 1 cup shredded cheddar cheese
- 3 cups chicken broth or stock
- 1/8 tsp garlic powder
- 1/4 cup half and half creamer or heavy cream
- 3 dashes black pepper
- salt to taste
Instructions:
- First, set to saute function for 6 minutes. Add bacon, butter, olive oil and onions. Stir scraping the bottom of the pot.
- Next, add cauliflower florets and chicken broth or stock. Put the lid on the pressure cooker and set to high pressure for 12 minutes.
- After timer goes off, let naturally release for 5 min. Then, manually release pressure. Open lid carefully.
- Next, add cheeses, garlic powder, pepper and salt to taste.
- Next, mash the cauliflower with a potato masher. Else, you can use a hand blender to get it smooth. Stir it until well combined and the cheeses melt.

Stove Top Directions:
- In a large pot, on med/high heat, add bacon, butter, olive oil and onions. Stir scraping the bottom of the pot.
- Next, add cauliflower florets and chicken broth or stock. Bring to a boil and then reduce heat. Cook on med/high heat covered for 15 minutes.
- Next, add cheeses, garlic powder, pepper and salt to taste.
- Next, mash the cauliflower with a potato masher. Else, you can use a hand blender to get it smooth. Stir it until well combined and the cheeses melt.
Before you have to go digging out those shorts or get rude comments made to you about putting on extra weight (insert eye roll here,) add this yummy low-carb Instant Pot Cauliflower and Bacon (yes, someone said “bacon”) to your list of low-carb recipes. - 3 cups chicken broth or chicken stock
- 1/8 tsp garlic powder
- 1/4 cup half and half creamer or heavy cream
- salt and pepper to taste
- 1 scallion, chopped optional for garnish
Instructions
- First, set saute function on Instant Pot to 6 min. Add bacon, olive oil, butter, and onions. Stir and scrape the bottom of the pot.
- Next, add cauliflower florets, half and half (or heavy cream) and chicken broth (or chicken stock.) Put lid on pressure cooker and set to high pressure for 12 minutes.
- Then, when timer goes off, let it naturally release for 5 minutes. Then, manually release the remaining pressure. Remove lid carefully.
- Next, add cream cheese, shredded cheddar cheese, garlic powder, pepper and salt to taste.
- Next, mash the cauliflower with a potato masher. Else, you can use a hand blender to get it smooth. Stir it until well combined and the cheeses melt.
- Garnish with scallions. (optional)
