There’s nothing quite as satisfying as a plate of perfectly cooked pasta topped with a rich, flavorful Sunday gravy (tomato sauce.) It’s one of my absolute favorite foods.

I say this as a daughter of Italian immigrants who’s lived in the Philadelphia area all of her life and has visited her family in southern Italy, which is well-known for their tomato sauces, over 10 times in her lifetime. 

Thankfully, I know a lot about tomato sauce and authentic Italian recipes. However, sometimes, your tomato sauce can turn out a bit too acidic, leaving you disappointed and wondering how to fix it. 

Whether you’re sensitive to acidity and have acid reflux or just prefer a milder flavor tomato sauce with a lower acidity level, there are a few effective, yet simple ways, to lessen the acidity of your homemade tomato sauce without sacrificing its taste. 

First, I’ll explain how simply selcting lower acid ripe tomatoes can help lower the acidity of tomato sauce and the other things you can do after you’ve found out your tomato sauce is more acidic than you’d like.

The natural acidity of the tomatoes makes a difference in the acidity level of your tomato sauce. That’s why Italians use mostly plum tomatoes to make tomato sauce. 

Roma tomatoes are slightly lower in acidity compared to other tomato varieties. This is good know when you’re selecting fresh tomatoes to make a homemade tomato sauce from fresh tomatoes.

For example, generally speaking, fresh tomatoes that have lower sugar are more acidic tasting and are usually heirloom tomatoes. 

This makes them a popular choice for individuals who prefer a milder tomato flavor for marinara sauce recipes. The lower acidity also makes Roma tomatoes suitable for individuals with sensitive stomachs or acid reflux issues.

Roma tomatoes are great to make a basic tomato sauce or low-acid marinara sauce.

San Marzano Tomatoes

While San Marzano tomatoes are naturally low acid and perfect for making low-acid tomato sauce. You’ll find them canned in grocery stores, Italian delis or Italian grocery stores. However, they are more pricy. Also, I’ve only ever found them canned as whole plum tomatoes. Therefore, you’ll have to puree them yourself which is easy to do with a handheld blender. 

Sometimes canned tomatoes can be more acidic than usual. It can be due to the amount of citric acid or lemon juice that was added during processing or the natural acidity of the tomatoes. Some types of tomatoes have a higher ph level than others. 

Sometimes they’re not as flavorful, which can render a flat tasting sauce.Sadly ther isn’t much you can do to it but, add cream to salvage it.

According to MyMidici.com, Italian peeled tomatoes are thin walled, not too sweet, with a thick, tasty, less acidic pulp and contain fewer seeds and less water than other tomatoe varieties.

This makes them the best choice for tomato sauce and pizza sauce in the world. For these reasons, the only sauce allowed on an authentic Neapolitan Pizza is crushed Italian peeled tomatoes. 

Seriously, there are laws in Italy on how to make pizza. It was invvented during the Roman Empire in Naples and is one of the many ways Italians stay true to their culture.

Add Sweet Vegetables

The most common way to balance the acidity of the sauce is by adding sweet ingredients while making it to add natural sweetness.

This could include: 

  • minced carrots (my suggestion)
  • roasted garlic
  • roasted onions
  • the ever popular American trend: caramelized onions

These ingredients not only add depth of flavor to your sauce, but also help to naturally reduce its acidity.

My Italian family taught me to add minced carrots to the tomato sauce at the point of adding the onions to the extra virgin olive oil. However, you may not know that the tomatoes are acidic at this point. If you fear the sauce will be too acidic, try a teaspoon full before you start cooking it. 

Add Heavy Cream

Incorporate creamy ingredients. Heavy cream adds a luxurious texture with a comfort food appeal. If you’re making a tomato-based sauce, try stirring in a splash of heavy cream or towards the end of cooking. This will help to smooth out the flavors and create a velvety sauce that’s less acidic on the palate.

As a matter of fact, my Creamy Roasted Cherry Tomato Pasta Sauce covers the acidity problem two-fold. It has cream, roasted cherry tomatoes, which are already sweet tomatoes and roasted garlic which, is a natural sweetness as I’v explained above.

Roasting helps to caramelize the natural sugars in the tomatoes, which can help counteract their acidity and create a richer, sweeter flavor profile. Simply cut your tomatoes in half, toss them with olive oil, salt, and pepper, and roast them in the oven until they’re soft and slightly caramelized.

Baking Soda

Add just a pinch of baking soda, which is an alkaline. It will help balance the excess acid.

It’s good to have a box of baking soda on hand to for baking anyway as many recipes require it as a levening agent. Therefore, it could be something you already have in your pantry or refrigerator.

White sugar

Sugar

Adding a teaspoon of sugar or a pinch of sugar is the most popular way Americans reduce the acidity in spaghetti sauce usually because Americans LOVE sweet tomato sauce. If you really want to sweeten your sauce with sugar, use a small amount and use white sugar, not brown sugar as brown sugar has molasses in it.

My humble opionion says no to molasses in tomato sauce but, Buddy the Elf loves it so, who am I to judge?

However, adding white sugar is not my suggestion of how to reduce acidity in tomato sauce. As I’ve mentioned above, I use minced carrots instead and I add them at the same time as the chopped onions and garlic while cooking the tomato sauce. It’s an excellent way to lower the acidity of the sauce without making it sweet.
