Honey and ginger taste so good together and when you add orange juice and cinnamon it’s even better! I love when my food tastes fresh and not processed, over salted or over seasoned. You can actually taste the carrots in this recipe!
How to Make Honey Ginger Glazed Roasted Carrots

In a mixing bowl, add:
- 1 tbsp olive oil
- 1/4 cup orange juice (and zest)
- 2 tbsp honey
- 1/2 tsp cinnamon
- 1/2 tsp grated ginger (this zester is great and you can use it to zest the orange too!)
Then, pour the oil mixture over the carrots and bake in an oil sprayed baking dish at 400F for about an hour. If you want them done faster, cut them into two-inch pieces and bake them at 400F for about 30 minutes or until tender.
That’s it! It’s so easy!

- 1 lb carrots peeled or unpeeled
- 1/4 cup orange juice
- 2 tbsp honey
- 1/2 tsp cinnamon
- 1/2 tsp freshly grated ginger or 1/4 tsp ground ginger
- 1 tbsp olive oil or corn, canola or vegetable oil
- 1/2 tsp orange zest optional

Preheat oven to 400F and oil spray a 1.75 qt baking dish or sheet pan.

In a small bowl, add orange juice (and zest,) honey, cinnamon, ginger and oil.

Lie carrots on the baking dish in a single layer and coat them with oil mixture. Turn them over to ensure they're fully coated.

Bake in oven for one hour or until carrots are tender when poked with a fork.
Cook them faster by cutting them into two-inch pieces and baking them at 400F for about 30 min.
Store leftovers in the refrigerator for up to five days.
