That’s what led to the creation of my Peppermint Baileys with Peppermint Schnapps Cocktail because you don’t need Peppermint Baileys to make it.
I have lots of great tasting cocktails on my website, but I have to say, making this homemade Baileys is much easier and faster than making homemade limoncello! With that said, it’s perfect for holiday gift giving when you’re already entrenched in your holiday baking!

Ingredients

- Irish whiskey (I used Jameson Irish Whiskey)
- fresh heavy cream
- instant espresso powder (or instant coffee granules)
- sweetened condensed milk (you may use fat free)
- chocolate syrup
- pure vanilla extract
- pure peppermint extract
TIPS:
- Use the freshest cream you can find. I go to a local dairy to buy the cream. The freshness is unparalleled and will taste better than a container from the grocery store.
- Use good quality Irish whiskey.
- Shake the bottle or stir the bottom. It settles as it sits in your refrigerator.
- Bottle it up for holiday gifts!

Add all ingredients into a large mixing bowl and stir until well combined. Taste and adjust flavor ingredients as you feel needed.

Pour your homemade Peppermint Baileys into a clean glass bottle or mason jar and seal it tightly.
Chill in the refrigerator for at least an hour before serving—this helps the flavors meld together. If stored in an airtight container, it will keep for up to 2 weeks in the fridge.

Homemade Peppermint Baileys
Ingredients
- 1 1/2 cups Irish whiskey
- 14 oz sweetened condensed milk
- 1 cup fresh heavy cream
- 1 1/2 tbsp chocolate syrup
- 1 tsp instant espresso granules (or instant coffee granules)
- 1 tsp pure vanilla extract
- 1/2 tsp peppermint extract (do not use "mint" extract)
Instructions
- First, to a large mixing bowl add the espresso granules, vanilla extract, peppermint extract and stir together until well combined. I've picked these three ingredients to mix together first because they're at room temperature so the espresso granules will mix better than clumping with cold ingredients such as the heavy cream.
- Next, add the and chocolate syrup, heavy cream and sweetened condensed milk. Stir until well mixed.
- Then, stir in the Irish whiskey and until well combined.
- Last, cover and refrigerate for about one hour before serving. Store in refrigerator up to two weeks.

Would it be possible to use brewed coffee rather than granules?
Hi Sharee. You would have to refrigerate them because they contain cream which is perishable. Plus, it will taste best cold. Hope this helps.
