Ham, Egg and Gouda Breakfast Muffins
Ingredients
- 1 1/2 cups Egg Beaters Original
- 6 puff pastry shells, thawed and quartered
- 1 cup cubed ham
- 2 tbsp finely chopped onions
- 6 slices Gouda cheese, quartered
Instructions
- First, preheat oven to 425F.
- Meanwhile, in a non-stick (12) muffin pan, press two (quartered) puff pastry pieces into the bottom of each muffin.
- Next, add one tablespoon of cubed ham to each muffin followed by a 1/2 tsp of finely chopped onion to each muffin .
- Next, add two quartered Gouda cheese slices to each muffin and then pour two tablespoons of Egg Beaters Original to each muffin.
- Last, bake breakfast muffins for 25 minutes at 425F.
I have a picky teenager, always on the go! She loved these! Easy to make and refrigerate. She takes them on the go which is a blessing. They are nutritional so I done have to worry about it being fatty with no nutritional content.
