It’s a great vegetable side dish to serve your whole family when you struggle to get them to eat green veggies. This zucchini recipe is made with minimal oil.

So, let’s get ready to enjoy some crunchy goodness without the extra carbs.

Why Air Fryer Zucchini Fries?

Before we jump into the recipe, let’s talk about why these zucchini fries are a game-changer. Zucchini is packed with nutrients and low in calories, making it a fantastic choice for a healthy snack.

By using the air fryer instead of deep-frying, we can achieve that crispy texture without all the added oil and fat. Plus, skipping the breading keeps this recipe low-carb and gluten-free!

At the grocery store, look for small, unblemished zucchini about 6-7 inches in length because if they’re bigger, they’ll have bigger seeds too. 

Ingredients

  • medium-sized fresh zucchini 
  • grated Parmesan cheese
  • olive oil
  • garlic powder
  • onion powder
  • Salt and black pepper, to taste
  • Cooking spray (optional, for greasing the air fryer basket) I like to use olive oil spray.

  1. First, wash the zucchini and patting them dry with a paper towel. Then, trim off the ends and cut the zucchinis into four-inch or so long strips. Try to make them as uniform in size as possible for even cooking.
  2. Next, in a large mixing bowl, combine the grated Parmesan cheese, olive oil, garlic powder, onion powder and pepper. Stir it together.
  3. Then, put the zucchini strips in the bowl and coat them with the Parmesan mixture. Stir to make sure zucchini strips are well-coated on all sides for maximum flavor.

  4. Next, preheat your air fryer to 400°F (200°C) for a few minutes. If your air fryer requires preheating, follow the manufacturer’s instructions.
  5. Then, once the air fryer is preheated, arrange the zucchini strips in your air fryer in a single layer on the trays or the air fryer basket. Make sure they’re not overlapping to allow for proper air circulation.

  6. Next, set the temperature to 400F and the timer for 10 minutes, flipping them halfway through the cooking time. Keep an eye on them to prevent burning—they should be golden brown and crispy when done. If you’re using an air fryer with trays, the top tray will cook faster than the bottom, so you will need to swap them while cooking.

  7. Then, once the zucchini fries are done cooking, remove them from the air fryer and let them cool slightly. Serve them with your favorite dipping sauce, like tomato sauce or ranch dressing, and enjoy the crispy goodness!

Also, it s a great way to use up abundance of zucchini in your garden or from the farmer’s market. We had a pesky ground hog eat all of our zucchini flowers one year! He actually climbed, or should I say waddled, over a 4 foot fence! I saw it with my own eyes!

    If you're using an air fryer with trays, the top tray will cook faster than the bottom, so you will need to remove that tray before the bottom one when it's done cooking and move the bottom one to the top.
  • Then, once the zucchini fries are done cooking, remove them from the air fryer and let them cool slightly. Serve them with your favorite dipping sauce, like tomato sauce or ranch dressing.

Notes

Refrigerate leftovers for upt to three days for maximum freshness. You may reheat in the air fryer for a few minutes on 380F.

  1. Hi Joann. Yes, you can however they may not come out as crispy. Cook them at 400F and watch them closely so they don’t burn.

    Easy to make. I did one batch as per recipe, then I used a sweet potato in place of the zucchini. My husband finished his plate and went back for more. I’m growing zucchini in the garden. This gives me another way to use them!
