It’s a side dish that’s delicious, healthy, and a little bit fancy with unforgettable flavors that’s easy to make too. Roasted fennel is my favorite way to eat it. This dish in Italian is called “finocchi gratinati” and is well known in Italian cuisine.

Fennel is a vegetable with a crisp texture and a mild, sweet flavor that has a subtle licorice flavor. It has a white bulb at the base, stalks that look like celery, and delicate green fronds that resemble dill.
While it’s common in Italian and Mediterranean cooking, fresh fennel is versatile enough to be used in soups, salads, and roasted dishes. My Italian immigrant mother ate raw fennel. She called it “finocchi”.
Not only is fennel tasty, but it’s also packed with nutrients such as fiber, vitamin C, and potassium and is a low carbohydrate vegetable. If you know anything about Italians, digestion is important to them and fennel is known to aid digestion and is served at the end of a meal.
Plus, it adds a fresh, aromatic quality to dishes.
Where Can I Find Fresh Fennel?
You can find fresh fennel at your local grocery store or local farmers markets when it’s in season which is typically in the fall and winter. Fennel is a cool-weather vegetable that thrives in temperate climates.
Its peak season typically depends on the region. Fresh Fennel is most commonly in season from late fall to early spring (October to March) in many areas. It grows well during cooler months and is often harvested after the first frost, which enhances its sweetness.
When buying fennel, look for firm, unblemished bulbs with bright green stalks and fronds. This ensures you’re getting the freshest produce, whether it’s peak season or not!
Can I make this recipe gluten-free?
Yes! Simply omit the seasoned Italian bread crumbs and use a 1/4 up of gluten-free Panko bread crumbs instead of the bread crumb mixture below.
Ingredients
I like using a mixture of Italian seasoned bread crumbs and Panko because the Panko gives this dish a nice extra crunch.

- extra virgin olive oil
- grated Parmesan cheese
- seasoned Italian bread crumbs
- Panko bread crumbs (Although not Italian, Italians do use it!)
- salt and black pepper to taste
Instructions Summary
First, preheat your oven to 375°F (190°C). Trim the fennel by cutting off the stalks and fronds (you can save the fronds for garnish if you’d like).
Then, slice the bulbs into 1/4 inch wedges, removing the ends as shown below.

Then, in a small bowl stir together bread crumbs and Panko bread crumbs.
Next, place the fennel slices in a single layer on a baking sheet lined with parchment paper. Drizzle with extra virgin olive oil and sprinkle with salt and pepper to taste.
Next, sprinkle the grated Parmesan cheese.
Then, top with a mixture of seasoned Italian breadcrumbs and Panko bread crumbs evenly over the fennel slices.
Next, bake in the preheated oven for 45 minutes, or until the fennel is tender and the topping is golden brown and crispy.
Last, remove from the oven and let it cool slightly. Garnish with fennel fronds for an extra pop of color and flavor, if desired.

It’s so delicious and is one of my favorite side dishes. Plus, it’s a nice for a change from the same old green veggies you’re accustomed to.
