This easy Mediterranean Rosemary Thyme Grilled Chicken recipe is easy and quick for a low carb lunch or dinner. Add it to salads, sandwiches, wraps, or serve it with potatoes or rice. It’s low carb and gluten-free!

Delicious and easy chicken recipes can be hard to come by. This is a staple recipe in my house because of its ease, versatility, high protein with low calories and fat content.
Because it’s not marinated, it takes minutes to prep and get on the grill. Also, because I used skinless boneless chicken breast, it cooks faster than if I use bone-in chicken, which you can certainly do. This is more of the authentic Italian version that they’d do in Italy because chicken cutlets are more used for frying- check out my chicken cutlets recipe.
As I’ve mentioned above, I add it to green salads, sandwiches, wraps, and sometimes serve it with Air Fryer Garlic Parmesan Potatoes, which is one of my most popular recipes, for dinner.

Mediterranean Rosemary Thyme Grilled Chicken
Boneless Skinless Chicken Breasts
I use boneless, skinless chicken breasts for this recipe. I also like to cut the chicken breasts in half and then again in the middle because they cook faster. You can use boneless chicken thighs for this recipe too.
You may also use bone-in chicken such as breasts, thighs, drums and wings. However, if using bone-in chicken, you’ll need to adjust the cooking time.
It will definitely take longer to cook bone-in on your grill. Cook bone-in chicken at 375F on the grill to give the middle more time to cook. Always check that the juice run clear before you take it off.
Ingredients

- boneless, skinless chicken breast
- extra virgin olive oil
- fresh rosemary
- fresh thyme
- garlic powder
- salt and black pepper
Instructions
First, preheat your outdoor grill to 400F.
Next, cut the boneless skinless breast into smaller pieces. Either cut them half or in half lengthwise. Put them into a large mixing bowl.
Then, put the chopped rosemary, thyme and extra virgin olive oil, garlic powder, salt and black pepper into the bowl and coat the chicken with the other ingredients. The oil will both season the chicken, allow the fresh herbs to stick to it and help the chicken not stick to the grill when cooking.
Next, place the chicken pieces onto the grill and cook on both sides for a few minutes or until the juice run clear when you pierce the thickest part with a knife. Don’t overcook the chicken or it will become dry.

Grill marks makes the chicken look so appetizing for some reason. It’s my favorite way to eat chicken because of the crispy edges with tender and juicy inside.
