The original Tom Collins cocktail is a timeless cocktail that has charmed drinkers for over a century.
It’s the epitome of refreshment, combining gin, lemon juice, sugar, and soda water into a fizzy, citrusy drink perfect for warm days but can certainly be enjoyed any time of year.
The Lavender Tom Collins takes this classic and infuses it with the subtle, aromatic elegance of lavender and this particular recipe add a hint of elderflower liqueur which makes it even more interesting because the elderflower works well with the botanicals in the gin transforming it into a sophisticated and modern libation.
When I discovered elderflower liqueur, I was amazed with the floral flavor and aroma. I first used in my Winter White Cosmo Cocktail Bonefish Grill Copycat Recipe and then used it with champagne for my Limoncello Elderflower Champagne Cocktail. Both of these recipes are delicious and sophisticated.

The History of the Original Tom Collins
You may be asking yourself: “Who is Tom Collins and why is there a drink named after him?” The origins of the Tom Collins cocktail date back to the late 1800s century.
Its creation is tied to the “Great Tom Collins Hoax of 1874”, a humorous social phenomenon in which people would claim that a man named Tom Collins was spreading rumors about the listener, prompting them to go out looking for him in frustration.
Bartenders capitalized on the joke, naming a drink after the elusive character. The cocktail remains beloved for its simplicity and adaptability.
The Lavender Tom Collins Recipe
This recipe adds a floral twist to the original by incorporating a lavender-infused simple syrup and the addition of elderflower liqueur. The resulting concoction is a cocktail that’s aromatic, slightly sweet, and just as refreshing as the classic.
Ingredients

- gin (Tanqueray, London Dry or a floral gin like Hendrick’s)
- elderflower liqueur (such as St. Germain) or elderflower syrup (non-alcoholic)
- fresh lemon juice
- lavender syrup (homemade recipe below)
- club water or mineral water
- ice
- optional garnish- lemon twist and/or lavender sprig
Instructions
- First, fill a tall glass with ice cubes.
- Then, add gin, lemon juice, and lavender simple syrup. Stir until well combined.
- Next, top with soda water and stir gently.
- Last, add a lemon twist and/or a sprig of lavender for garnish.
If you choose to buy the elderflower syrup instead using elderflower liqueur, obviously it will not be as alcoholic however, the recipe only calls for one tablespoon of elderflower liqueur so, you can get that flavoring with the much cheaper elderflower syrup.

How to make Lavender Simple Syrup
- ½ cup sugar
- ½ cup water
- 2 tsp dried culinary lavender (or a small handful of fresh lavender flowers)
Homemade Lavender Syrup Instructions
- First, combine the sugar, water, and lavender in a small saucepan.
- Then, bring to a simmer over medium heat, stirring until the sugar dissolves.
- Next, remove from heat, let it steep for 15 minutes, then strain to remove the lavender.
- Last, allow the lavender syrup to cool before use.

Ingredients

- 1 tbsp elderflower liqueur (St. Germain) (or elderflower syrup)
- 1 tbsp lavender syrup
- 1 1/2 tbsp fresh lemon juice
- 2 oz Pellegrino or club soda
- 8 oz ice
- 1 lemon twist or sprig of lavender for garnish

Pitcher Recipe
Makes 4 servings.Ingredients

- 1/4 cup of elderflower liqueur (such as St. Germain) or elderflower syrup (non-alcoholic)
- 1/4 cup plus 2 tbsp of fresh lemon juice
- 1/4 cup lavender syrup (homemade recipe below)
- 1 cup of club water or mineral water
- 2 lbs of of ice
- optional garnish- 4 lemon twists and/or lavender sprigs
Instructions
- First, to a pitcher, add: gin, lemon juice, and lavender simple syrup. Stir until well combined. NOTE: Don’t add the club soda until just before serving or it will water down the the drink along with the melting ice. Plus, it will lose its carbonation (fizz.)
- Next, gently stir in club soda.
- Last, fill four tall glasses with ice and pour in the cocktail mixture into each glass. Add a lemon twist and/or a sprig of lavender for garnish to each glass.
