When summer zucchini is plentiful, this is a simple zucchini recipe is a great way to use up your garden zucchini. Be careful not to let your zucchini get too large before you pick them.
When they’re large, so are their seeds and you will have more seeds than flesh.

Simple Italian Zucchini Frittata Recipe
Ingredients

- large eggs
- small zucchini- small zucchini have smaller seeds than medium and large zucchini.
- grated parmesan cheese
- extra virgin olive oil
- garlic
- salt
- black pepper
Instructions Summary
First, wash and cut zucchini into very thin, round slices about 1/16th to 1/8th of an inch thick. This helps it cook quickly and evenly.
Then, heat the olive oil in a nonstick large frying pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
Then, add the zucchini slices and a pinch of salt and pepper. Sauté for 5-7 minutes, stirring occasionally, until the zucchini becomes soft and slightly golden.
Meanwhile, whisk the eggs in large bowl and add grated parmesan cheese, salt and black pepper to taste. The cheese adds a wonderful depth of flavor and helps create a creamy texture.
Next, pour the egg mixture over the zucchini in the skillet. Reduce to low heat and let it cook undisturbed for about 5-7 minutes until the edges start to set.
Using a large spatula, gently pull the frittata away from the edges of the pan and gently flip it over. This will allow the others side to become golden brown.
Let the frittata cool slightly before slicing it. Serve warm or at room temperature.
Storage
Store leftover frittata in an airtight container for a couple of days for maximum freshness.
