This delicious low carb asparagus recipe is made with simple ingredients- fresh asparagus, lemon, EVOO and seasonings and with only a 25 minutes of cooking time, it’s a great weeknight easy side dish for just about any dinner or holiday meal. It’s low calorie, gluten free and Vegan as well.

Tender asparagus is an excellent choice for a healthy side dish because it’s easy to clean, cut and season. Plus, it doesn’t take long to cook in the oven. It’s a perfect side dish you can make ahead which, makes it a great option for dinner parties or holiday dinners when you already have a lot to do.
This is my favorite way to eat asparagus because it’s so easy to make. It goes well with just about any meat or fish main course. The fresh lemon juice and zest in this recipe really gives it a pop of citrus flavor that accents the olive oil flavoring.
The Italian seasoning in this recipe is contains most of the Italian staple seasonings- oregano, basil, rosemary, parsley and thyme which give it a nice blend of flavors all in one 1/2 of a teaspoon!
Low Carb Asparagus Recipe
Asparagus is a low-carb vegetable so it’s great for Keto side dishes and a low carb diet and is a healthy side dish. As far as I’m concerned, there should be NO vegetables that aren’t low-carb but, life isn’t fair. You already know that but, seeing it in writing helps.
Asparagus is a good source of vitamins, with one of your most coveted- vitamin C. It’s high in antioxidants, supports digestive, brain and heart health. Plus, it’s a natural diuretic. Therefore, you may want to add this recipe to your Keto-friendly recipes.
Cooking asparagus is simple. Just be careful not to overcook it because it will become mushy.

Ingredients

- fresh asparagus
- lemon (for fresh lemon juice and lemon zest)
- extra virgin olive oil
- garlic powder – It adds flavor and evenly coats more than fresh garlic.
- Italian seasoning
- salt
- black pepper
First, preheat oven to 375F.
Then, wash and trim asparagus of the thick part of the stalks. They’re hard and bitter so take off about three inches from the bottom.
Next, put the cleaned and trimmed raw asparagus onto a small baking sheet.
Then, add extra virgin olive oil, garlic powder and Italian seasoning.
Then, using a citrus zester, zest some of the lemon over the asparagus.
Next, add a quick gentle squeeze of lemon (about a 1/4 teaspoon.)
Then, using tongs, stir the asparagus to coat it with oil and seasonings.
Last, bake at 375F for 25 minutes or so depending on the thickness of your asparagus. Thick stalks will take a few minutes longer to cook. Also, you may like asparagus dish more tender and that will take a few minutes longer as well .
Additions
- Add grated Parmesan cheese to this dish, if desired.
- Add a dash of red pepper flakes for some hot spice.

Asparagus goes well with nearly any meat, fish or seafood. It’s perfect with salmon and your favorite steak!
