Easy Italian Fruit Salad (Macedonia)

Italian fruit salad (a.k.a. Macedonia) is simple, vibrant, and delicious made with ripe fruit- strawberries, blueberries, pineapple and a lemon dressing sets it apart from others. It's wonderful, sweet alternative to high fat desserts. Plus it's gluten free.

Ingredients
  

  • 1 tbsp fresh lemon juice
  • 1 1/2 tbsp sugar (or more to taste)
  • 1 lb ripe strawberries
  • 2 cups ripe pineapple
  • 1 cup blueberries
  • 1 spring of fresh mint leaves (optional for garnish)

Instructions

  • First, add one tablespoon of fresh lemon juice to a large mixing bowl.
  • Then, add the sugar (1 1/2 tbsp) to the lemon juice and stir to mix it.
  • Then, cut clean and hull the strawberries. Slice them or cut them as you wish. Add the slices to the mixing bowl with the lemon juice.
  • Next, cut off the top, bottom and sides of the pineapple. Cut the sides off the core and dispose of it. Cut the pineapple into bite-sized pieces. Add it to the mixing bowl.
  • Then, rinse the blueberries and add them to the mixing bowl and stir the fruit. Allow the flavors to meld for about 15 minutes before serving. Garnish with fresh mint leaves, if desired.
