This pan-fried cod fish recipe is a testament to how simple ingredients can come together to create something extraordinary.

This is one of my favorite ways to eat cod because frying it in olive oil gives it great flavor and dredging it in cornmeal gives it a nice crispy exterior texture. With just a few ingredients, you can create a dish that’s elegant enough for the holiday table, yet approachable for any cook.

What is Cod?

Cod is a thick, white flaky fish that is popular in Italian cuisine, especially around Christmas. In Italian, it’s called “baccala” which is referred to the dried salted cod.

It’s salted and dried for preservation. It then needs to be soaked in water before cooking.

It’s a sturdy white fish that’s great-tasting fried or baked. Additionally, Americans use it to make fish tacos, which is also delicious.

Why do Italians eat Cod on Christmas Eve?

Cod is a classic fish in Italian cooking, beloved for its mild flavor and tender texture. Italian cuisine is all about letting fresh ingredients shine, and this recipe does exactly that.

The Feast of the Seven Fishes celebrates seafood, honors Catholic traditions, and brings families together around the dinner table. Fried cod holds a special place in this feast because of its simplicity and versatility.

Italians eat cod on Christmas Eve as part of the Feast of the Seven Fishes (La Vigilia), a cherished tradition deeply rooted in Catholic customs and Italian culinary heritage.

The practice stems from the Catholic Church’s historical guidelines to abstain from meat on the eve of holy days, like Christmas, as an act of fasting and preparation for the celebration of Christ’s birth.

Seafood, particularly cod, became the centerpiece of this feast due to its availability, versatility, and connection to Italy’s coastal regions.

When I was in Catholic grade school, which is decades ago, I’d come home to the strong aroma of fish!  My mom was soaking dried cod for Christmas and I’d smell it as soon as I walked in the door.

Cod, especially in its salted form (baccalà), has been a staple in Italy for centuries. Salted cod was easy to preserve and transport, making it widely available even in regions far from the sea. Its long shelf life made it an ideal ingredient for festive meals, especially during the winter months when fresh fish was harder to obtain.

Cod’s versatility and adaptability made it a favorite in Italian kitchens and a perfect addition to the Feast of the Seven Fishes, where families often serve multiple seafood dishes to celebrate the occasion.

Don’t be intimidated by making cod if it’s your first time. With my step-by-step instructions, you can have this seafood main dish ready in 15 minutes, believe it or not!

That’s taking into account that your cod is fresh and not dried. If you have the dried, salted cod, allow it to soak in water in your refrigerator for up to two days before it’ll be ready to cook.

How to Make Crispy Italian Fried Cod

Soaking the fresh cod in mineral water ensures a delicate texture, while a flavorful blend of garlic powder, black pepper, and a light cornmeal coating delivers a golden, crispy finish. It’s fried to perfection in olive oil, then lightly salted to enhance its natural flavor.

I like to use garlic powder in this recipe because it coats the cod fillets nicely and evenly. Alternatively, you can put a garlic clove in the pan while the fish is frying to get some of the garlic’s great flavor into the fish.

Ingredients

  • fresh cod fillets, cut into smaller pieces
  • sparkling mineral water, such as Pellegrino
  • garlic powder or garlic cloves
  • fine yellow cornmeal
  • extra virgin olive oil for flavor and frying (or avocado oil, vegetable oil  or any oil with a high smoke point; enough to shallow fry)
  • salt 
  • freshly ground black pepper

What kind of oil to use for frying

I don’t fry a lot but, when I do and depending on what I’m frying, I choose either extra virgin olive oil (EVOO) or avocado oil because lately, I’ve been trying to stay away from cooking with seed oils. 

Avocado oil has a neutral taste but, the EVOO gives this dish a lot of wonderful flavor. You only need enough to shallow fry it and I think it’s worth the cost but, you can certainly use any cooking oil you wish. 

Instructions Summary

First, soak the fresh cod. If you’re using dried salted cod, submerge it in water and soak it in your refrigerator for up to two days. Then, follow instructions in the recipe card below.

If you’re using fresh cod from the grocery store or fish monger, soak it in sparkling mineral water a.k.a. carbonated water for ten minutes. This step tenderizes the fish and keeps it moist while frying.

Then, fry the fillets in hot oil for about 3–4 minutes per side, or until the cod is golden brown and cooked through. The fish should flake easily when the center of the thickest piece of fish is poked with a fork.

Then, put the fried cod on a paper towel-lined plate to drain the excess oil and add salt to taste.

Add a squeeze of fresh lemon juice onto it before serving, if desired.

Crispy Italian Fried Cod is best served fresh and hot, but it also holds up well if made slightly in advance. Pair it with:

  • Homemade tartar sauce- Stir together 1/4 cup of mayonnaise plus 1 tablespoon of relish.
  • Garlic butter sauce
  • Lemon butter sauce

This fried cod dish also works beautifully alongside other Feast of the Seven Fishes favorites, such as shrimp scampi, baked clams, or seafood salad.

Tips for Perfect Fried Cod

  • Choose Fresh Cod: Fresh cod ensures the best flavor and texture. If fresh isn’t available, high-quality frozen cod (thawed before use) works too.
  • Use Sparkling Water: The bubbles in mineral water make the fish tender and give the cornmeal coating a lighter texture.
  • Don’t Overcrowd the Pan: Fry in batches to maintain even cooking and crispiness.
  • Serve Immediately: Fried cod is at its best when served hot and crispy.

Storage

Store leftover pan-fried cod in an airtight container in the refrigerator and consume within a day or two.

Ingredients
  

  • 1 lb 1 pound (450g) fresh cod fillets, cut into smaller pieces about 3-4 inches long
  • 1 cup sparkling mineral water
  • 1/2 cup fine cornmeal
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 cup extra virgin olive oil for frying (you can use avocado oil, vegetable oil or other cooking oils with a high smoke point)
  • salt to taste

Instructions

  • Place the cod fillets in a shallow dish and pour the sparkling mineral water over them. This step tenderizes the fish and keeps it moist while frying.
  • Remove the cod from the mineral water and pat it dry with paper towels.
  • Sprinkle the garlic powder and black pepper evenly over both sides of the cod fillets.
  • Place the cornmeal in a shallow dish. Dredge each piece of cod in the cornmeal, pressing lightly to ensure an even coating.
  • Heat the olive oil in a large skillet over medium heat. To test if the oil is ready, sprinkle a pinch of cornmeal into it—if it sizzles, you’re good to go.
  • Carefully add the coated cod fillets to the pan, frying in batches if necessary to avoid overcrowding. Fry in hot oil for about 3–4 minutes per side, or until the cod is golden brown and cooked through. The fish should flake easily when the center of the thickest piece of fish is poked with a fork.
  • Add a squeeze of fresh lemon juice onto it before serving, if desired.
