It’s been traditionally served with slow cooked sauces such as my homemade tomato sauce a.k.a. gravy, meaty sauces or your favorite sauce. It’s popular in Italian cuisine.

This is an impressive dish to make for special occasions or pasta night! Also, freezing is a great way to preserve it for holidays when you’re so busy.

The word pappardelle comes from the Italian verb “pappare” which means “to gobble” in relation to eating.

How to Make Homemade Egg Pasta

Equipment

It’s so easy with the Kitchen Aid attachments. You’ll be making pasta quickly and efficiently without flaring up your carpal tunnel or shoulder pain.

Ingredients

In summary, you’ll add the ingredients to the stand mixer and mix with the paddle attachment for about 2 1/2 minutes.

Then, remove the paddle attachment and attach the dough hook. Turn it to speed two and knead the dough with the dough hook for about two minutes.

Then, remove the dough and hand knead it for about two minutes on a floured countertop. Let stand for twenty minutes. 

By hand, divide the dough into eight pieces. They don’t have to be even. Knead one dough piece for a few seconds and then pat it in between your hands so flatten it.

Then, if using a pasta machine: feed the dough into the dough roller attachment on speed two on the number one setting of the attachment.

Next, fold the dough and run it through the rollers again.

Then, repeat this step with the second and third or fourth setting and finally with setting five. Put the pasta sheets on a floured surface.

Next, use this manual roller cutter.

Run the pasta sheet through the cutter attachment once and lie it on a pasta drying rack.

Repeat the above steps with each piece of pasta dough.

Boil a large pot of generously salted water, ready to embrace the pasta with warmth and tenderness.

The cooking process is brief, but pivotal—mere minutes separate perfectly al dente pasta from a mushy mess of a  disappointment. Be alert, tasting and testing the pasta until it reaches al dente perfection. Set a timer!

How long do I cook fresh pasta?

Cook dry (fresh) pasta for about 7 minutes depending upon thickness.

Cook fresh pasta for 2-5 minutes depending upon thickness.

Italian Pappardelle Pasta Recipe

This basic egg pasta pappardelle recipe is easy-to-make with eggs, all-purpose flour, salt and water. It yields 1 1/2 lbs of pappardelle pasta.

Ingredients
  

  • 4 large eggs
  • 1/4 cup water
  • 3 1/2 cups sifted, unbleached all purpose flour
  • 1/2 tsp salt

Instructions

  • First, place eggs, water, flour and salt into the mixer bowl. Use flat beater and set speed to number 2 and mix for about 30 seconds or mix by hand.
  • Next, take off the flat beater and put in the dough hook. Knead for 2 minutes on speed number 2 or knead by hand on a floured surface until the pasta dough is pliable. Skip next step if kneading by hand. You may need to add a spoon of water if it's dry.

  • Then, remove dough from bowl and hand knead for two minutes. The dough should be pliable. If it's not add a little more water until it is pliable.
  • Next, let the pasta dough rest for 20 minutes.
  • Then, divide dough into 8 pieces.
  • Next, knead one of the dough pieces by hand for a few seconds and flatten.
  • Then, using a rolling pin, roll out by hand the dough into pasta sheets.

  • Next, repeat until the remaining 7 pieces of dough are rolled into flat pasta sheets.
  • Then, using the pappardelle rolling pin, roll and cut the pasta and lie the cut pasta on a floured surface to dry.

  • Then, cook the pasta in boiling, salted water for 2-5 minutes depending on the thickness of the cut pasta or cook the pasta sheets to use for lasagna. Pasta floats to the top of the water while cooking. Drain in colander. See notes for cooking dried pasta.

Notes

Dried Pasta

If you’re not cooking the pasta immediately, let it dry on a pasta drying rack. Cook dried pasta for 7 minutes or so depending on thickness of pasta in salted, boiling water. Add 1/4 cup of salt to 4 quarts of water.

Storage

Store dried pasta in plastic zipper bags in the freezer (up to one month) or refrigerator (about 2-3 days.) until ready to cook.
