It’s an authentic Italian recipe made with skinless chicken breasts is cooked in tomatoes that become a rich tomato sauce and gooey cheese that’s reminiscent of chicken parmesan without the breading, which is perfect for those needing gluten free recipes.

Because it’s made with only a few ingredients, cooks in one pan and requires very little prep, it comes together quickly for busy weeknights. This is true of my Pork Pizzaiola and Steak Pizzaiola recipes too. I just love the simplicity of pizzaiola recipes. 

The tomato sauce in this chicken dish has no added sugar like most jarred tomato sauces do. Therefore, it tastes fresh and the way that Italians in Italy would make it. That’s how you bring real Italian cooking into your own kitchen!

Simple Chicken Pizzaiola Recipe with Tomato Sauce

Ingredients

  • boneless, skinless chicken breast
  • passata, San Marzano tomatoes or tomato puree
  • fresh mozzarella cheese slices
  • extra virgin olive oil
  • garlic
  • capers (optional)
  • fresh basil leaves
  • salt and black pepper
  • red pepper flakes (optional)

Instructions

  1. First, cut the chicken breasts lengthwise if they’re thick.
  2. Next, in a large skillet on medium high heat, add the olive oil and chopped or minced garlic and cook for 30 seconds. 
  3. Then, add the chicken breasts and cook for about 3 minutes on each side and remove.
  4. Next, add the capers (if using) into the pan followed by the tomato puree. Cook on medium high heat for about five minutes. NOTE: If using San Marzano tomatoes, you may need to puree them first.
  5. Then, add the chicken back into the pan, add salt and pepper to taste and cook covered for 20 minutes. Simple chicken pizzaiola recipe with tomato sauce
  6. Next, add the sliced mozzarella to the tops of each chicken breast and add the basil leaves to the sauce. Ingredients
  

  • 2 lbs boneless, skinless chicken breast
  • 1/4 cup extra virgin olive oil
  • 2 tbsp capers, drained ((optional))
  • 3 cloves garlic
  • 28 oz San Marzano tomatoes, passata or canned tomato puree
  • 8 oz fresh mozzarella slices
  • 10 leaves basil
  • salt and pepper to taste
  • red pepper flakes (optional)
