This cheesy, easy lasagna soup with ground beef recipe is a wholesome, filling and tasty soup perfect for cold winter days.
Honestly, who doesn’t like lasagna? Well, I’m sure there are some and they’re probably not Italian. When you grow up on pasta, you find out there are many great ways to eat it.
At first, I thought lasagna soup sounded unappealing but, after I decided to make it, I found out it is almost as good as the real thing!

Easy Lasagna Soup with Ground Beef
What kind of pasta to use

Use Mafalda, “lasagnete corte” or “lasagnotti” pasta. I’ve seen Mafalda pasta in grocery stores. Else, you can use Mafaldine pasta and break them into smaller pieces.
When making traditional lasagna, there always seems to be a couple lasagna sheets leftover from making lasagna so, save them for this soup recipe! You can just break them into pieces.
What kind of ground beef to use
I suggest using good quality 80-85% lean ground beef because if you use 70+% lean, it will be too greasy. If you use 90+% lean, you won’t get enough of the beef fat that adds flavor. However, you can certainly choose that if it’s your preference.
Ricotta Cheese
I realized I didn’t have ricotta cheese in my refrigerator the day I decided to make this soup so I made my own ricotta with my Instant Pot.
Because I only needed 1/3 of a cup of ricotta cheese for this recipe, I just made it with two cups of milk and a tablespoon of white vinegar using my pressure cooker. It saved me a trip to the store.
However, if you don’t have ricotta cheese or don’t like it, this recipe will be delicious without it too.

Ingredients

- Mafalda pasta or similar pasta shape with ruffled edges
- ground beef
- tomato sauce (try my popular homemade tomato sauce recipe!)
- onions
- garlic
- extra virgin olive oil
- Italian seasoning
- chicken broth
- shredded mozzarella cheese
- ricotta cheese
- grated parmesan cheese
- fresh basil (optional)
- fresh parsley
Summary Instructions
First, sautee onions and garlic in extra virgin olive oil. Then, add the ground beef and break it up. Next, add tomato sauce and cook for about ten minutes. Next, add the chicken broth and pasta, cover and cook on med/high heat for 15 minutes. Last, add the grated parmesan cheese, mozzarella cheese and ricotta cheese.

Substitutions and Additions
Substitute ground Italian sausage for the ground beef or use a quarter pound of each in this recipe.
Use crushed tomatoes or passata instead of a ready made tomato sauce.
Although I personally wouldn’t use cottage cheese as a substitute because I just don’t like it, you can do that if you wish. It’s your perogative.
Add spinach leaves for some green veggie goodness.
PRO TIPS
Use homemade chicken broth to elevate the flavor of this soup and to control the sodium.
For a better presentation than broken up lasagna sheets, use “lasagnete corte” or “lasagnotti.”
Storage
Store leftovers in the refrigerator for up to three days for maximum freshness. Freeze in an airtight container for up to six months.

Easy Cheesy Lasagna Soup with Ground Beef
Ingredients
- 3 tbsp extra virgin olive oil
- 1/4 cup onions, chopped
- 3 cloves garlic, chopped
- 8 oz ground beef
- 1 tsp Italian seasoning
- 1 tbsp fresh parsley, chopped
- 12 oz tomato sauce
- 1 qt chicken broth (4 cups or 32 oz)
- 6 oz lasagna pasta
- 1/3 cup ricotta cheese
- 1/2 cup mozzarella cheese
- 1/4 cup grated parmesan cheese
- 4 leaves fresh basil (optional)
Instructions
- First, on med/high heat in a medium size sauce pan, sautee onions and garlic in extra virgin olive oil for three minutes.
- Then, add the ground beef and Italian seasoning and break it up. Cook for about 5 minutes.
- Then, add the tomato sauce and cook for about 15 minutes.
- Next, add the chicken broth and pasta, cover and cook on med/high heat for 15 minutes. Turn off heat.
- Last, stir in the grated parmesan cheese, mozzarella cheese, ricotta cheese fresh basil (if using) . Check the doneness of the pasta as thicker pasta will take a little longer to cook. You may leave the ricotta cheese in clumps as shown in the photos.
