Easy Caprese Salad with Peaches and Cherry Tomatoes

Caprese Salad with Peaches is a delicious twist on classic caprese salad and is just as simple and even more delicious! It’s made with sweet cherry tomatoes, mini mozzarella balls, juicy peaches, sweet basil and a quick homemade balsamic dressing finished with a nice drizzle of balsamic glaze!

It’s a low carb, gluten free and vegetarian side dish or easy lunch made with simple ingredients and little effort. Because it’s refreshing, it’s perfect for hot summer days and easy to put together quickly for parties.

Peach Caprese Salad

This peach caprese salad brings out the best flavors of summer. The sweetness of the peaches adds more depth of flavor to a traditional caprese salad. Plus, it’s a great way to use up peaches in peach season. 

Tomato salad is a delight to eat in the summer when your tomato harvest is coming in. But, adding fresh mozzarella cheese and fragrant basil makes it more filling and more appealing.

With this easy recipe, I’ll show you how to make a quick and delicious balsamic dressing to enhance its flavors.

As you know, traditional caprese salad is made with tomato, fresh mozzarella cheese, basil leaves and a balsamic dressing but, I like using cherry tomatoes and mini mozzarella balls. It alleviates much of the prepping involved with some of the cutting. That way you can enjoy yourself instead of spending a lot of time in the kitchen.

This cherry tomato caprese salad with mini mozzarella balls recipe is one of those delicious and easy variations of traditional caprese salad. It’s a simple salad with lots of flavor, especially if you use sweet, ripe tomatoes from your garden.

But, if you don’t have a vegetable garden, you can find fresh tomatoes at a local farmer’s market. You may even find heirloom cherry tomatoes.

Serve it as a refreshing appetizer/antipasto before a meal, or enjoy it as a light and satisfying lunch on its own with crusty bread. The combination of sweet cherry tomatoes, creamy mozzarella, sweet peaches and fresh basil leaves is sure to tantalize your taste buds and leave you craving more.

Where to find fresh mozzarella balls

You can find fresh mozzarella balls (or fresh mozzarella pearls if you prefer) at the grocery store in the refrigerated cheese section or dairy section. Also, they’re often sold at Italian novelty grocery stores.

Should you cut the cherry tomatoes?

When the cherry tomatoes are cut in half, the juices will mix with the balsamic dressing and peach juices to add more flavor to the salad. Also, cutting the cherry tomatoes makes them easier to eat and will not cause the juices and seeds to burst out when bitten. You don’t want to be sitting next to someone when that happens nor be wearing a white shirt! 

What kind of peaches to use

You can use  sweet yellow peaches or white peaches. I’m not familiar with other typs of peaches but, sweet ripe peaches are what you want to use for this recipe. 

I don’t suggest using canned peaches for this recipe because they won’t be inline with the other fresh ingredients of this dish. Also, the syrup will interfere with the overall taste of this dish.

Ingredients

  • cherry tomatoes 
  • fresh mini mozzarella balls 
  • ripe peaches
  • fresh basil leaves
  • extra virgin olive oil
  • black balsamic vinegar
  • balsamic glaze (optional)
  • salt and black pepper to taste

Summary Instructions

First, add balsamic vinegar and extra virgin olive oil to a medium sized bowl with salt and pepper and stir it. Then, make basil ribbons. They’re easy and I tell you how to do that in the recipe card.

Then, halve the cherry tomatoes and throw them in the bowl followed by drained and rinsed mini mozzarella balls and peach cubes. Stir it and youThat’s it!

Before putting it in a serving dish, I like to give a nice back and forth squirt of balsamic glaze on top just before serving to make it look even more appetizing. Plus, it gives it some more balsamic flavor and a touch of sweetness.

You may serve this caprese salad with peaches immediately.

Substitutions

  • Use grape tomatoes instead of cherry tomatoes. If you don’t have cherry or grape tomatoes, you may use other types of tomatoes but, cherry and grape tomatoes are sweeter.
  •  Use mozzarella “pearls”, which are smaller, instead of mini mozzarella balls.
  • If you don’t have mini mozzarella balls, cut up mozzarella into cubes.
  • I used white balsamic vinegar once but, I don’t suggest using it because the flavor us not as robust as the black balsamic vinegar.

Storage

Put leftovers in an airtight container and put it in your refrigerator. It’ll last a few days. It’s best to eat fresh mozzarella because it loses flavor over time.

In just a few simple steps with fresh ingredients, you can create a delicious salad that’s as pleasing to the eye as it is to the palate. It’s the perfect side dish summer salad that’s a timeless classic. It never fails to impress.

Caprese Salad with Peaches is a delicious twist on classic caprese salad and is just as simple and even more delicious! It's made with sweet cherry tomatoes, mini mozzarella balls, juicy peaches, sweet basil and a quick homemade balsamic dressing finished with a nice drizzle of balsamic glaze!

Ingredients
  

  • 9 oz ripe cherry tomatoes
  • 8 oz mini mozzarella balls
  • 1 peach
  • 8 large fresh basil leaves
  • 1/2 tbsp black balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 2 dashes black pepper

Instructions

Make Balsamic Dressing

  • First, add to a medium-sized bowl: balsamic vinegar, extra virgin olive oil, salt and black pepper. Stir well.
  • Next, discard the liquid in the mini mozzarella balls container and lightly rinse them. Add them to the bowl with the balsamic dressing.
  • Then, rinse the cherry tomatoes under cold water. Pat them dry gently with a towel. Cut them in half and add them to the bowl with dressing and mozzarella.
  • Next, peel the peach, remove the pit and cut the peach into small 1/2 inch cubes.
  • Next, layer the fresh basil leaves and roll them. Cut them width wise to make ribbons. Add them to the bowl and stir.
  • Then, taste test and add more salt and black pepper (if needed) to taste.
  • Finally, just before serving, add a drizzle of balsamic glaze for a sweet and tangy finish.

Notes

Store this Caprese Salad with peaches in the refrigerator until ready to serve.
If you’re adding balsamic glaze, do so just before serving so it doesn’t brown the white mozzarella cheese.
I don’t use white balsamic vinegar in this recipe because I don’t think it adds enough balsamic flavor to it, personally.

    I was just at the produce farm and picked up fresh peaches and cherry tomatoes. this dish is a MUST during the summer months.
