Easy Caponata Recipe (Sicilian Vegetable Appetizer or Side Dish)

This easy Caponata recipe (Sicilian vegetable dish) is made with roasted eggplant and garlic, onions, peppers, celery, fresh tomatoes, green olives and basil that brings together summer flavors into one tasty dish. Use it as an appetizer or for an antipasto platter, side dish or mix it in with pasta or rice for a more filling dish.

I make this dish with both roasted eggplant and roasted garlic and those flavors put this recipe over the top. If you’re making this dish in the summer, use fresh garden vegetables to make it spectacular!

There are different variations of this dish so, add and remove what you like. For example, not all versions of caponata include peppers but they add even more flavor.

Caponata Ingredients

  • cubed eggplants
  • chopped onion
  • chopped celery rib
  • chopped red bell pepper
  • chopped tomatoes
  • extra virgin olive oil
  • capers, drained
  • green olives, pitted 
  • white vinegar or red wine vinegar
  • sugar
  • basil leaves, plus for garnish
  • salt and black pepper to taste

Substitutions or Additions

  • Use one 14-ounce can of diced tomatoes if you don’t have fresh tomatoes.
  • Use Spanish olives if you don’t have green pitted green olives.
  • Serve with 2 tablespoons toasted pine nuts. 
  • Instead of sugar, add 1/4 cup of raisins.

First, clean, cut and roast the eggplant with garlic. Then, cook in olive oil in a large skillet: onions, celery, peppers and capers for a few minutes. Then, add chopped tomatoes, vinegar, sugar and olives and cook ten minutes. Next, add roasted eggplant, water and basil and cook 2-3 more minutes. 

You may need to add less water depending on the consistency you’d like. 

As mentioned above, enjoy this flavorful dish as a side, a topping for bread, or even as a main course with pasta or rice.

Easy Caponata Recipe (Sicilian Vegetable Appetizer or Side Dish)

This easy Caponata recipe (Sicilian vegetable dish) is made with roasted eggplant and garlic, onions, celery, peppers, fresh tomatoes, green olives and basil that brings together the flavors of your summer into one tasty Italian dish that's slightly sweet and savory. Use up fresh garden vegetables and use it as an appetizer or side dish or mix it in with pasta or rice. Add it to your antipasto platter or charcuterie board.

Ingredients
  

  • 2 medium eggplants
  • 1/4 cup extra virgin olive oil, divided
  • 1/2 cup onion
  • 1/4 cup diced celery (or one celery rib)
  • 1/2 cup red bell pepper
  • 2 cups chopped fresh tomatoes (or 14 oz can of diced tomatoes)
  • 1 tbsp sugar
  • 1 tbsp white vinegar or red wine vinegar
  • 1/2 cup green olives (or Spanish olives with pimento)
  • 1/2 cup water
  • 6 basil leaves

Instructions

  • First, preheat oven to 400F.
  • Then, wash and cut the eggplant into one inch cube pieces (with or without skin) and place on a baking sheet. Sprinkle eggplant with salt and allow it to "sweat out" the brown, bitter juices for ten minutes. Pat with a paper towel.
  • Next, add extra virgin olive (2 tbsp) and garlic cloves (4) to the eggplant. Stir and roast at 400F for 30 minutes.
  • Then, in a large skillet, add of extra virgin olive oil (2 tbsp), chopped onion( 1/2 cup) celery (1/4 cup), capers (2 tbsp) and red bell pepper (1/2 cup). Cook until the vegetables are softened, about 5 minutes.
  • Then, add the chopped tomatoes (or canned tomatoes), vinegar (1 tbsp) sugar 1 tbsp) and green olives (1/2 cup) to the skillet, stir and cook for another 10 minutes. Add 1/2 cup of water.
  • Then, add the roasted eggplant to the skillet. Stir in the basil leaves and let it simmer another 3-5 minutes for the flavors to meld.
  • Next, season the caponata with salt and black pepper to taste.
  • Last, add roasted pine nuts and garnish with fresh basil (or parsley) before serving.
