Easy Baked Pork Chops, Potatoes and Carrots Recipe

This simple, baked pork chops and potatoes recipe has juicy pork chops, tender potatoes and carrots seasoned with fresh herbs and olive oil for a delicious dinner the whole family will like. It’s a sheet pan dinner that’s easy and tasty with little prep for the cook!

This easy recipe is different than many than other pork chop recipes that use a dry rub or sugary sauce.

With this recipe, stir together some fresh parsley, chopped garlic, salt, black pepper and extra virgin olive oil and put it on the pork chops and veggies for complete meal that’s not complicated. 

This is a hearty dinner for weekends too because sometimes they can be just as busy as weeknights. Plus, you worked all week so why spend half the weekend cooking and cleaning up? I get it!

This baked pork chops recipe is made with simple ingredients you can easily find at the grocery store and because it’s made with one baking sheet, there’s easy clean up too!

In short, I peeled and cut the potatoes and carrots and coated them with seasonings along with the pork chops and baked them on a sheet pan for about 45 minutes. 

What kind of pork to use

You may use bone-in pork chops or boneless pork chops. TIP: If using boneless pork chops, cut the potatoes and carrots in half-inch cubes so that the meat and potatoes will be done around the same time. Bone-in pork chops will take longer to cook than boneless. 

What kind of potatoes to use

You can use any potato varieties you like for this easy recipe. You will save prep time if you use baby carrots and leave on the skin.

  • pork chops (bone-in pork chops or boneless pork chops) 
  • potatoes (yellow, russet, baby or red potatoes)
  • carrots
  • fresh parsley
  • fresh garlic
  • extra virgin olive oil
  • salt and black pepper

Summary Instructions

First, preheat oven to 400F.

Then, to a large mixing bowl add olive oil, garlic, parsley, salt and black pepper and stir.

Next, put pork chops on a large baking sheet. Add desired amount of salt, black pepper on top followed by a drizzle of the oil mixture.

Then, peel and cut the potatoes and carrots into one inch cubed pieces and add them to the bowl with the oil mixture. Stir to coat the potatoes and carrots.

Last, bake at 400F for about 45 minutes or until the center of the thickest pork chop is no longer pink inside (internal temperature reaches 165F) and the potatoes are soft.

Cooking Time

The cooking time needed for this recipe depends mostly on the thickness of the pork chops and potatoes.

Therefore, the larger you cut the potatoes, the longer they’ll take to cook and soften. It’s such a disappointment to find out the potatoes are still hard, especially when they’re already on your dinner plate!

Storage

Store leftovers in an airtight container for up to three days in the refrigerator to maintain flavors.

  • 1 lb potatoes (yellow, russet, red or baby potatoes)
  • 10 oz carrots
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley

  • salt and pepper to taste
