This baked Italian cod recipe is made with cod fish fillets, thinly sliced potatoes, cherry tomatoes, fresh rosemary and olive oil for a fabulous fish dinner! It’s a low-calorie sheet pan dinner that’s gluten free with only a few simple ingredients.

When my Italian first cousin from Italy visited this past Christmas, her husband made this delicious baked cod fish recipe. I thought it’d be a great way to make cod so here is the recipe.
I’m fortunate to come from a family of great cooks which is why I have a lot of delicious Italian recipes on this website. My beloved, and unfortunately late, mother was straight from southern Italy and an incredible home cook. She made cod and called “baccala”, which is dried and salted.
My mother would serve it as a second course after the pasta course. She would make fried cod and that was super delicious!
Italian Cod Recipe
This easy recipe is perfect for your Italian Christmas Eve Dinner when you’re looking for an easy fish recipe because you already have a lot to do with hosting. Do look at my Feast of the Seven Fishes where you’ll find many Italian fish recipes.
I try to incorporate fish dishes into our family dinner rotation and flaky cod is great choice. Fish is simple to prepare with fresh herbs and some olive oil.
What is Cod?
Cod is a popular mild white fish known for its flaky meat and firm texture of the fish. It’s commonly found in the cold water of the North Atlantic and Pacific Oceans.
Cod fillets are widely used in various cuisines, often baked, grilled, fried, or used in dishes like fish and chips, fish stews, and chowders.
It’s a rich in protein, low in fat, and a good source of vitamins B12 and D, as well as omega-3 fatty acids. It’s a great choice when you’re looking for healthy recipes.
There are a number of ways to prepare cod. Here are just a few common ways. You can make it with lemon juice and butter or olive oil, garlic herb sauce, a bit of tomato sauce and fresh basil, or pesto sauce.
It tastes good with Kalamata olives and black olives.

Ingredients

- cod fillet
- Russet potatoes
- cherry tomatoes
- extra virgin olive oil
- fresh rosemary
- sat and pepper
- red pepper flakes (optional)
Summary Instructions
First, preheat your oven to 400F.
Then, in a medium sized baking dish, put a sheet of parchment paper.
Next, peel the potato into very thin slices (1/16th of an inch wide) and place them in a large bowl with olive oil, chopped rosemary and black pepper. Stir to coat the potatoes.
Place them on the parchment paper in a single layer. Then, put the cod on top of the potatoes. Brush it with oil and sprinkled garlic powder, black pepper and salt on it.
Next, bake it for 25-30 minutes. Check the potatoes to ensure they’re cooked through.
Last, add salt to taste to the potatoes.
NOTE: The cooking time can vary depending on the thickness of the fillet. Keep an eye on it the last 5-10 minutes of cooking. You want it to cook along the same time as the potatoes without over cooking the fish.
Therefore, if the fish is done first, remove it and allow the potatoes to finish cooking so the fish doesn’t overcook.
Storage
Store leftovers in an airtight container in the refrigerator and consume within 1-2 days.
What to serve with baked cod
There are many side dishes you can serve with baked cod. Sometimes, all you need a nice big salad or a side salad or steamed vegetables. Here are some good suggestions.
- Air Fryer Parmesan Green Beans
- Sauteed Broccoli Rabe with Garlic and Lemon
- Arugula Salad with Lemon Vinaigrette and Shaved Parmesan
- crusty bread
- White wine, such as Sauvignon blanc (my personal favorite) or Pinot Grigio, are great wine choices for this fish recipe.

Easy Baked Italian Cod with Cherry Tomatoes Recipe
Ingredients
- 1 lb cod fish fillet
- 3/4 lb russet potatoes
- 1 cup cherry tomatoes
- 1 tbsp fresh rosemary, minced
- 7 tsp extra virgin olive oil ( (divided) or 2 tbsp plus 1 tsp)
- 1/4 tsp garlic powder, divided
- salt and pepper to taste
- 1 dash red pepper flakes (optional)
Instructions
- First, preheat oven to 400F.
- Then, peel potatoes, rinse and pat dry with a paper towel. Slice them as thin as you can 1/16 inch thickness. If some come out a little thicker than that, cut them in half at thickest point. This is important so that potatoes cook at same time as fish without overcooking fish.
- Next, add the very thinly sliced potatoes to a large bowl and add 2 tbsp of the olive oil, 1/2 tbsp of chopped rosemary, 1/8 tsp of garlic powder and black pepper to taste. Stir them in the bowl to coat them with the olive oil.
- Then, add a piece of parchment paper to a baking dish or baking sheet.
- Next, put the oil coated potatoes in a single layer using your fingers to ensure they aren't stacked on each other.
- Then, put the cod fillet on the top of the potatoes in the middle of the baking dish. Brush the top of the cod with the one remaining teaspoon of olive oil. Sprinkle the remaining 1/8 tsp of garlic powder and salt and pepper to taste.
- Next, bake at 400F for 25-30 minutes or until the potatoes are tender and the fish is cooked through and flaky. See note below.
