Avocado Toast with Egg Recipes
This recipe is made with a slice of toast, ripe avocado, an over medium egg, fresh basil, sweet cherry tomatoes and is drizzled with a touch of balsamic vinegar glaze, which adds a tangy flavor to it!
It’s one of my favorite breakfast recipes because it’s so delicious and filling. The basil and tomato with balsamic glaze adds a fresh touch to avocado toast with egg. The first time I had this dish was in a local restaurant that serves great breakfast dishes and I knew I had to publish it for my readers. It’s even better in the summer when you can use fresh garden tomatoes and basil.
What’s more is that you can make this avocado toast with any type of bread you like and cook the egg to your liking. Make it with a fried egg, poached egg, sunny side up egg or over medium egg, which is my favorite way to eat an egg. Where I’m from in Pennsylvania, we call it a “dippy egg” because you can dip your toast into it. I just love it!
Plus, you can use grape tomatoes, instead of cherry tomatoes, if that’s what you have on hand.
Like olive oil, avocado is one of the healthy fats because it’s high in monounsaturated fats. Additionally, avocado is high in fiber and contains essential vitamins and minerals such as potassium, vitamins E and K and folate, which supports digestion and helps to maintain healthy cholesterol levels. Therefore, I try to incorporate it into my diet as much as possible because it’s healthy and I like it so much.

How to tell if an avocado is ripe?
Avocados are ripe when they feel soft with a gentle squeeze and the flesh starts to pull away from the skin. The skin becomes darker as the avocado ripens. Therefore, it will turn from a medium/dark green to very dark green (almost black) when it’s ripe. It can takes days for an avocado to ripen so, keep that in mind when selecting them at the grocery store.
Avocado Toast with Egg and Cherry Tomato

Ingredients

- slice of bread (wheat or white works best)
- egg
- ripe avocado
- cherry tomatoes
- basil leaves
- balsamic glaze
- salt and black pepper
You can use slices of avocado instead of smashed avocado if you prefer.
I use my air fryer to toast the slice of bread but, a toaster or toaster oven works well, of course.
Instructions Summary
First, on medium-high heat, cook the egg to until the white part is no longer transparent- a couple of minutes.
Meanwhile, toast the slice of bread.
While the bread is toasting, cut the cherry tomatoes in half.
Then, cut the ripe avocado in half, remove it from it’s peel with a spoon and slice it or put into a small bowl and mash it down with a fork.
Next, put the avocado onto the slice of toast followed by the basil leaves and cherry tomatoes.
Then, put the cooked egg on top.
Next, add salt and pepper to the egg.
Last, drizzle with balsamic glaze.
Additions and Substitutions
- Use grape tomatoes instead of cherry tomatoes or use slices of tomato.
- Add some goat cheese on top of the avocado. It tastes great with the cherry tomatoes and balsamic glaze.
- Add some chopped red onions to the smashed avocado.
- Use a poached egg instead of sunny side up.
- Instead of using salt and black pepper, use bagel seasoning.
As I’ve mentioned above, this easy recipe is a wonderful step up from the standard avocado toast with egg. It’s particularly wonderful in the summer when cherry tomatoes and basil are in season.
