What Kind of Pasta Can I Use
I suggest using the following long pasta to make this dish but, you can certainly use tubular pasta, like ziti or penne, if you prefer it.
- spaghetti
- bucatini– classic Roman pasta (hollow spaghetti)
- linguine
- fettuccine
- ribbon pasta such as pappardelle
What Kinds of Mushrooms Can I Use
I used baby bellas for this recipe because I like them and they were on sale. Baby bella mushrooms are in the middle stage of maturity- further than white mushrooms but, not as mature as portobello mushrooms.
However, you can use various kinds of mushrooms that are typically easy to find at the grocery store:
- baby bellas mushrooms
- white button mushrooms
- cremini mushrooms
- porcini mushrooms- soak them for about 10-15 minutes or until they’re soft and plump before sauteeing them.
You can buy the mushrooms already sliced to save some prep time but, I find sliced mushrooms harder to clean.
It’s easier to clean whole mushrooms than sliced mushrooms so keep that in mind when you’re choosing them at the grocery store. It only takes a few minutes to slice them up yourself, if you’ve got the time.
How to Clean Mushrooms
For mushrooms with little visible dirt, use a damp paper towel to remove dirt pieces. Avoid soaking them in water as mushrooms absorb water and can become soggy.
However, if the mushrooms have a lot of visible dirt, you will need to rinse them under a colander, shake off the excess water and then pat them dry with paper towels before you sautee them to avoid hot oil splatters. If rinsing them, you may need to cook them a little longer to get the moisture out.

Summary Instructions
*The printable, full recipe is in the recipe card at the bottom of this post.
First, cook the pasta al dente according to package directions in a large pot of salted water. Use 1 tbsp of salt for two quarts of water (unless you’re on a low sodium diet.) Drain pasta as usual. No need to reserve starchy pasta water unless you want to.
Clean the mushrooms as described above.
Then, saute the mushrooms- Add olive oil, garlic and onions to a large skillet and cook 2-3 minutes. Then, add the sliced, clean mushrooms and cook for about 15 minutes, uncovered. Add fresh parsley, salt and pepper to taste.
Take the mushrooms and their juices out of the skillet and put them aside. Add butter and heavy cream and cook a couple of minutes on medium-high heat until bubbly. Stir in grated parmesan cheese. Add drained cooked pasta to the skillet and give it a good stir.
Serve this pasta dish with additional grated parmesan cheese on top and a sprinkle of fresh parsley. Serve it as a main dish for a delicious meal for Meatless Monday or a side dish to steak, pork or chicken.

Easy and Creamy Garlic Mushroom Pasta
Ingredients
- 8 oz pasta
- 1/4 cup extra virgin olive oil
- 1/2 cup chopped onions
- 5 cloves garlic, smashed and chopped
- 1 lb baby bella mushrooms
- 3 tbsp fresh parsley
- salt and black pepper to taste
- 1/2 cup heavy cream
- 2 tbsp butter
- 1/4 cup grated parmesan cheese (optional)
Instructions
- First, cook pasta according to package directions "al dente" or to your liking. Be sure to salt the water- about 1 tbsp for two quarts of water (unless you are on a low sodium diet.) Drain and set aside until ready to use.
- Meanwhile, clean mushrooms. Wipe them with a damp cloth or damp paper towel to remove any dirt. Avoid submerging them under water as mushrooms absorb water and can become soggy. You can buy them already sliced but, they may be harder to clean when already sliced.
- Next, slice the whole mushrooms into even slices. If they're small, you can cut them into halves or quarters, or slice them if they’re larger.
- Then, in a large skillet, add the olive oil over medium-high heat. As the oil begins to heat, add the garlic and onions and sautee for one minute until they're fragrant and translucent. Be careful not to let the garlic brown or it will become bitter!
- Then, add the mushroom slices. Spread them out in an even layer and let them cook undisturbed for about 5 minutes. This helps them get a nice golden brown color.
- Next, then season with salt and black pepper. Let the mushrooms cook for another 5-7 minutes until they're tender and have released their juices.
- Then, add in the fresh parsley and stir. Remove mushrooms and juices from pan.
- Next, add the butter, heavy cream and grated parmesan cheese to the same pan on medium-high heat and cook for a few minutes until it starts to bubble.
- Next, add back the mushrooms with juices to the pan and stir.
- Then, add in the drained pasta and stir. Top with additional grated parmesan cheese if desired.
