Italian Sausage Peppers and Onions is a super delicious combination founded by Italian-Americans long ago. It’s great for sandwiches or to make in a casserole with potatoes too which is equally delicious!
This dish is a wonderful weekend dinner you can throw together in the afternoon and have a yummy dinner with little prep that everyone loves. It will be fresh in your refrigerator for 3-4 days.
Freeze the leftovers for another time when your teen gets home later and there’s nothing left of dinner.
What makes this dish perfect for parties is that you can serve it right out of the Crock Pot when it’s ready in four hours. Just don’t let it sit too long or the peppers will turn to mush!
This dish is low carb and gluten-free if you don’t add pasta or sandwich rolls.
Crock Pot Italian Sausage Peppers and Onions Recipe
I add a 15 oz Hunt’s Tomato Sauce can to this recipe that makes the marinara sauce for this recipe. The garlic, oil, onions and Italian seasoning make the sauce for this recipe. The sausage and peppers render a lot of flavor to the pasta sauce thereby making it a tasty dinner to serve your family or friends.
Add two teaspoons of Italian seasoning to this recipe to give it a good blend of flavors. Italian seasoning includes: basil, oregano, rosemary, thyme, marjoram, sage, and savory. Some Italian seasoning blends may omit sage and/or savory but, most contain the other seasonings mentioned.
Although “Italian seasoning” is an American idea, it makes for a tasty convenience in your spice cabinet and comes in handy for Italian recipes.
I suggest using Amoroso Hoagie Rolls (which you can conveniently buy on Amazon.) if you’re going to serve this as sandwiches. They’re a good bread choice for cheesesteaks , Italian Sausage Subs and meatball sandwiches too but, any good-quality long bread rolls will do.
Green Bell Peppers
Use sweet bell peppers. You can use two green bell peppers and two red bell peppers as I did in this recipe or you can use all of one kind. It’s up to you. You may also throw in a yellow pepper or orange bell pepper if you want.
Red Bell Peppers
It’s up to you but I do find that red bell peppers add a nice natural sweetness to the tomato sauce. My Italian Stuffed Red Peppers with Bread Stuffing are proof of that. I like to use a combination of green pepper and red bell peppers but, you can certainly only use green peppers.
It’s a great way to use up garden peppers.
You’ll need one large yellow onion or two small onions. They give a lot of flavor to this dish. You can slice them or chop them but, I like to use sliced onions in mine. Alternatively, you can use a white onion or sweet onion if that’s what you have on hand.
I almost always use extra virgin olive oil in my cooking. It gives great flavor to the food while being one of the healthier oils you can use. It’s a staple in Mediterranean cooking and I grew up on it.
Sweet Italian Sausage
I like to use sweet Italian sausage links but, you can certainly use spicy Italian sausage. Use a good quality sausage such as Premio. I suggest searing the sausage before adding it to your slow cooker because it adds more flavor to the dish while making the sausage look more attractive.
Otherwise, the Italian sausage links will look steamed rather than browned and delicious. Trust me on this. I’m not one who doesn’t mind doing extra dishes. Therefore, I think it’s worth the added step.
Also, the sausage cooking in the oil for a few minutes will season the oil with some pork fat and that is very flavorful to add to this dish. So, if you have time, don’t skip this step!
Italian Sausage and Peppers in Crock Pot Recipes
While you’re searing the Italian sausage, prep the peppers and onions. Then, add them to the slow cooker and put the seared sausage on top. Add a can of Hunt’s tomato sauce, garlic cloves and Italian seasoning, cover and cook for four hours.
Don’t let cooking time go more than 4 1/2 hours or you risk the peppers getting mushy and trust me, they will.
This is a delicious meal your family will love and become their favorite dinner! Also, it’s a great game day recipe.

Crock Pot Italian Sausage Peppers and Onions Recipe
- 2 lb Italian sausage links (10 links) You can use fewer links if you choose
- 3 tbsp extra virgin olive oil
- 4 green and/or red bell peppers
- 1 large onion (or two small)
- 4 garlic cloves
- 15 oz Hunts tomato sauce
- 2 tsp Italian seasoning
- First, add oil to a large frying pan on high heat. Add sausage links and cook about 2 1/2 minutes per side to sear them only. Turn off heat when five minutes is up while you finish the next step.
- Meanwhile, clean and cut the peppers and onions. Cut the peppers about 1 1/2 inches wide (do not cut them thinly as they'll cook faster and are more likely to get mushy if overcooked.) Add the cut peppers, onions and garlic on top of the sausage in the Crock Pot.
- Then, remove sausage with oil and put both into the slow cooker on top of the peppers and onions.
- Next, pour the tomato sauce on top of the sausage and sprinkle with Italian seasoning. Cover and cook on low for 4 hours. Do not allow it to cook for more than 4 1/2 hours or you risk the peppers getting mushy. This is especially important if you're serving it from the Crock Pot and it'll be heated for longer than 4 hours.
